Double baked Panettone or biscotti

Hi dolls!

Summer is officially here!
So I thought I create something light for breakfast.A few days ago I came across a recipe for double baked cake which was really great,but most of the ingredients were either not available or too expensive.
It was a yeast cake,so I thought about turning the panettone into a double baked/Zwieback/ biscotti  and it worked.
Panettone Recipe 
I added:
160 gr whole Hazelnuts
180 gr Pistachios
And after baking this cake,I let it cool,sliced it and baked it again for 20 minutes at 180 degree Celsius while turning the slices around every 5 min.

It turned out soooo nice and yummy!

Turmeric and Sesame Cookies with Chilli chocolate

Hi dolls :D

Those cooking shows will kill me *sigh*

I was so inspired by the Indian food featured in an episode of  'the f-word' that I had to run into the kitchen and do something.I still had one batch of eggless cookie batter left in the freezer,so I though maybe some unusual spices would bring a little piece of India into my cookies.
The recipe for the eggless cookie dough can be found HERE 

I added :
-1/2 generous teaspoon turmeric
-a dash of nutmeg
-1/2 teaspoon cardamom powder
-1/2 teaspoon ground star anise

For the decor:
200 gr milk chocolate
1/4 teaspoon chili powder
a tiiiny dash of salt
50 gr sesame seeds

Before baking I sprinkled the cookies with sesame seeds

What can I say? They came out amaaaaazing!

Vegetarian Eggless Cookies

Dolls,you can't imagine how good this baking session felt!
We are officially back to cooking and baking.

These cookies are for the nice builders that are fixing our roof.They are really good people...and as you might know,I show my gratitude with food gestures.To my surprise the dough beats the basic cookie dough recipe I use,because the texture of the final cookie is finer,and somehow closer to those fancy cookies you can buy from a patisserie.

You need:
220 gr margarine (butter flavored margarine is even better)
130 gr icing sugar (sifted )
250 gr flour (sifted)
50 gr corn flour
the juice of an orange or lemon (I used orange),You may need more,so buy 2 oranges
1 teaspoon vanilla extract or 2 teaspoons vanilla sugar
a dash of salt
200 gr chocolate of your choice (I used 75% cocoa dark chocolate)
a piping bag or a sturdy plastic bag with

Soften the margarine by stirring it,add icing sugar,vanilla extract and salt.Beat with the electric mixer until fluffy.Now slooowly add the juice and beat again ,then you gradually add the corn flour mixed with the flour.
If the dough is too stiff (It has to be piped),add more orange juice.
Take a small amount of dough and put it in the piping bag to check if it is pipe-able.If not,add more juice.
If you don't have a piping bag,just take a freezer bag,fill it with dough and snip off a tiny edge on the bottom.
But be careful: The dough should not be too runny.
Line a baking tray with parchment paper and preheat the oven to 190*Celsius/Medium high heat.
Pipe the dough onto the parchment paper and create any shape you like.
Bake for 10-15 min with no air !!

Let the cookies cool for 2 hours
Melt the chocolate in a double boiler or in the microwave and decorate the cookies.

Chocolate chip cookies with caramelized peanuts


Hi dolls,

Punching a dough is one of my number one stess/anger/sadness relief-remedies......
So since yesterday was certainly not my day,I made some cookies.
As usual I followed my Basic cookie dough recipe 
I exchanged the 325 gr all purpose flour with 280 gr whole grain/whole wheat flour.

For the rest you will need:
150 gr coarsely chopped peanuts (unsalted)
5 tablespoons of powdered sugar
1 tablespoon of water
200 gr dark chocolate (coarsely chopped)
1 teaspoon pure vanilla extract

Knead the dough (and maybe give it a punch or two).......

In a dry non stick pan add the peanuts,powdered sugar and the water.While stirring slowly,let the sugar and water melt and then caramelize.Once the color of the caramel has a golden hue,remove from the heat and spread on a cooling rack with non stick baking paper.

In case your peanuts are stuck or clumped together,simply put them in a freezer bag and give them a whoop or two with a rolling pin.

Add the chocolate,peanuts and vanilla extract to the dough and knead a little to spread the goodies evenly.

And that's it :D

Almond Vanilla Macaroons


Hi dolls

There is no better time for Macaroons than winter,especially this recipe is perfect because it includes winter spices.

You need:
4 egg whites
150 gr sugar
1 tablespoon vanilla sugar or 1 vanilla pod (scrape out the seeds and use them)
200 gr peeled whole unsalted almonds
a dash of: ground ginger,cinnamon,nutmeg,salt
Plastic bag

Lightly toast the almonds in a dry non stick pan until they just start to color.Pulse in the blender until finely ground
Beat the egg whites until they have a fluffy,not yet firm texture.The easiest way is to use an electric mixer.

While mixing gradually add sugar and spices.Keep on beating until the mixture is stiff peak textured and relatively shiny.Fold in the ground almonds,but keep 30-50 gr for sprinkling . Fill the dough in a plastic bag and by snipping off a tiny edge you can make your own little piping bag.
Pipe the dough on an oven tray lined with non stick baking paper.Sprinkle the left over ground almonds all over.
Bake at 180 Degree Celsius (medium high) for 15 min

Cookie House or the alternative small,edible gift wrap


Hello :D

Looking for a cute edible gift? This little cookie house will be the packaging of this years edible gift.
I can't tell you what the edible gift will be yet,but it sweet...tiny...and round.
You can even put a little jewelery box inside!

It is sooo much fun to build and decorate.I didn't buy a lot of decoration stuff,neither did I get the biscuits I wanted to use.But you get the idea :D

For the Glue you need:
300 gr of icing sugar (Always have extra icing sugar)
2-3 tablespoons water

Mix it into a thick paste.Thick enough to hold the biscuits without slipping and sliding and thin enough to be used in a piping bag.
To have a stable base either use a piece of cardboard on a plate or just a piece of strong non wobbly plastic.
Now for the walls you may take whatever rectangular biscuit.Chocolate covered,ginger bread etc.
For the decoration,use any candy you love.Food coloring,sprinkles,smarties,chocolate,gummi bears etc
Build the house in parts.First the walls,let them dry for 10 min,then the roof.

Kids will enjoy making those :)

Breakfast cookies


Hello Lovies,


I got tired of making my breakfast in the morning,so I was looking for something sweet,not too sweet though,that I can just put in my mouth while having my cup of tea.Of course it would be great to gobble down some chocolate chip cookies,but that is not healthy.Too much sugar in the morning can cause fatigue.
So I took my basic cookie dough recipe (click) and changed some things.
I replaced half of the flour with oats (made into oat flour in the blender),sweetener instead of sugar,one banana instead of an egg.I also added a hand full of dried cranberries,vanilla and some nuts I had left over to the blender.When kneading the dough I noticed that it needs to be a bit thicker,so I added about a cup of rolled oats.
And when they came out of the oven and I tasted them,I found out that they need more sweetness.So I mixed some icing sugar with cranberry juice and decorated my cookies in a very sloppy manner (as usual :D)
When I am making stuff for myself,it doesn't need to look perfect.

Now the cookies are perfect.

Coconut and chocolate creme filled cookies


Hello

Yesterday was the right time for a little confiserie session.With all the baking time it took me 2 hours to make those goodies.The filling was supposed to be white chocolate,but since I had only 100 gr white chocolate I mixed some semi sweet chocolate inside.


For the cookie base use the basic cookie dough recipe and replace the corn starch with 100 gr instant vanilla pudding powder.

For the filling :
200 gr white chocolate (normal chocolate will also be fine)
50 gr coconut shavings
50-75 ml cream
1 teaspoon butter

You will need 100 gr coconut shavings extra,for sealing the filling and for decoration

For the coating
200 gr dark chocolate
200 gr semi sweet chocolate.

Make your cookie dough and cut out little round cookies with a cookie cutter.Bake the cookies until they are light brown.
For the filling melt the white chocolate in a sauce pan and add the coconut shavings,butter and cream.
Once adding the butter the mixture will get stiff,add enough cream so it becomes smooth and paste-like.If the filling is too runny,add more coconut shavings.


I recommend using disposable latex free examination gloves!!!!

Get a small amount of the filling, and place it on a cookie.Flatten it a bit and smooth out the edges.
For my size of cookies I used a bit more than a half teaspoon of filling.
Once you applied the filling to all the cookies,dip the filling in coconut shavings,so that the chocolate will stick later.

Let the filling set for 10 minutes.
Melt the chocolate for the coating in a double boiler.Let it cool,so you don't burn yourself.
With a pair of gloves dip each cookie into the melted chocolate and place the cookie on a non stick paper.

Sprinkle with coconut shavings and chill for 1 hour.


It was really fun to make these and actually it was just a crazy experiment.But the cookies came out so perfect and yummy.Nobody actually believed that I made them myself.

Back to school cookies

School and University has started for a lot of you guys and I have been asked a lot lately what foods can help your performance while studying for the next test.
Basically you need good sources of energy,a bit of sugar and nuts to keep focused,avoid exhaustion or fatigue.
The cookies are delicious.That is all I know for sure :D

You need:
150 gr all purpose flour
175 gr whole wheat flour
50 gr rolled oats (put in the blender and turn into flour)
150 gr brown sugar
200 gr margarine
1 egg (for vegan cookies replace the egg with vegan yogurt *35-50 gr* or a half banana)


a hand full of whole almonds
a hand full of cashew nuts
a hand full of hazelnuts
a hand full dried cranberries
a hand full of raisins
some chocolate sprinkles


First of all put the nuts,cranberries and raisins in a blender and roughly crush them.

Put flours,oats,sugar,egg and the margarine in a bowl and knead it into a dough with your hands.
Add the crushed nuts,sprinkles and cranberries/raisins and shape your cookies with your hands (when wearing nail polish always wear gloves!!!).Place the cookies on a baking tray lined with non stick paper and bake for 12-15 min on medium high temperature until golden brown.

Basic cookie dough recipe

When you have this recipe you can create 100000 different kinds of cookies.You can add anything you like.
And the best part is,that this cookie dough doesn't need to be chilled.

You need :
325 gr flour
100 gr corn starch
150 gr sugar
1 egg
200 gr butter /margarine

Put all ingredients in a bowl and knead a dough.Add anything you like : Chocolate chips,lemon zest,nuts,raisins,dried fruit,spices,cacao powder,vanilla extract,Baileys liquor....... a.n.y.t.h.i.n.g will do.
Bake for 10-15 min (depending on thickness)

In the photo I divided the dough into two and the white cookies are vanilla and lime zest.
The black cookies are cacao powder with toasted almonds.

Summer cookies

Hi
Inspired by the beautiful weather and the stunning smells of blossoming lemon trees in the summer I wanted to give my basic cookie recipe a summery touch.

You need:
200 gr Butter or Margarine (room temperature)
100 gr corn starch
100 gr whole grain flour
225 gr all purpose flour
150 gr sugar
50 gr brown sugar
1 teaspoon vanilla extract
the zest of one lemon
1 egg
powder sugar

Combine the dry ingredients
Knead in the butter and eggs with your hands.
Press out little shapes of your choice and bake for 10-15 min at medium high temperature (180 Celsius)
Dust the cookies with powder sugar while they are still hot.

And yes,the pretty flower in the picture is real and from my garden.

Raspberry Coconut Cookies

Those cookies are made with my basic cookie recipe.They are fun,fast and easy!
You need:
200 gr Butter (room temp)
1 teaspoon vanilla extract
150 gr sugar
1 egg
325 gr all purpose flour
100 gr corn starch
50 gr coconut shavings
a pinch of salt

For the coconut crust:
200 gr coconut shavings
1 egg
4 tablespoons milk
100 gr icing sugar

For the jam-filling:

4-5 tablespoons raspberry jam
1 tablespoon lemon juice
1 tablespoon strawberry jam

The dough is the easiest part.Put all ingredients in a bowl and start kneading a dough.From the dough you make little balls in the size of a walnut.
Now beat one egg with 4 tablespoons milk and put the egg wash in a deep bowl.Put the coconut shavings in another deep bowl.
Now take your balls,drop 4-5 of them in the egg wash and by moving the bowl you will cover all the balls evenly.
After the egg wash put your dough balls in to the coconut shavings and cover them evenly.
Place on a baking tray lined with nonstick baking paper.
Sprinkle some icing sugar over the cookies,so it will later caramelize.

With your fingers push little holes into the dough balls and flatten them slightly.
Pre heat your oven to 180 degree celsius (medium high)

Let's prepare the jam filling.
In a small saucepan heat the jam with the other ingredients,so the jam gets more liquid and easier to work with.
Don't boil it though!
Fill your little dough ball with a teaspoon and make sure you don't fill them entirely.
Bake your cookies for 18-25 min 180 degree Celsius.

Orange Ginger Dark Chocolate Cookies

Today was cookie day for me!
I came up with a new recipe made from mixed old recipes.The result is stunning and sooo delicious.

You need

For the dough:
200 gr Butter
150 gr sugar
1 egg
325 gr all purpose flour
100 gr corn starch
a pinch of salt
a pinch of cinnamon
the zest of 1/2 orange
100 gr dark chocolate (50 gr powdered in the blender/ 50 gr small chunks)
1/2 teaspoon ground ginger
1 teaspoon vanilla syrup

For the icing :
1 egg white
6 tablespoons sugar
a pinch om tumeric
1 teaspoon fresh orange juice
1/2 teaspoon cinnamon

Put the sugar in the blender and add the ginger.Push the button and release it every 2-3 seconds.
Now mix all the ingredients well in a bowl and knead a dough.
Roll the dough out about 5-7 millimeter thin.With a shotglass cut out small cookies and place them on an oven tray with nonstick baking paper.

The icing :
Beat one egg white until it becomes very stiff and glossy.A balloon whisk and a clean bowl are the secret.
Slowly add the sugar and the spices and beat constantly.
You have to drizzle the orange juice very very very slowly into the mixture.

Now spread the icing on the cookies with a pastry knife or a butter knife.
Bake the cookies at 160-170 degree Celsius until the icing becomes crispy.It took me 12 min in an old fashioned oven.

chocolate chip deluxe cookies.


Who doesn't like a good cookie with his hot beverage?
I love cookies even with no milk/tea/coffee.

Some time ago a friend gave me a recipe for a basic cookie dough,that can be used for so many different kind of cookies.
I tried a lot of different ingredients,but the following recipe is one of my favorite.
And the best part of this recipe is,that it is so easy and fast.
The dough doesn't need cooling,rising,or setting.

Here is the basic dough recipe
200 gr Butter
150 gr sugar
1 egg
325 gr all purpose flour
100 gr corn starch
a pinch of salt

Mix all the ingredients together in a bowl with your hands and knead a dough.
Additional I added :
200 gr dark chocolate chips
1 tablespoon fresh orange juice
1 teaspoon vanilla syrup
1 teaspoon cognac
a pinch of cinnamon
and caramelized oats (you take a pan with a few drops of oil and you put like 5-8 tablespoons of rolled/old fashioned oats in it.
Sprinkle the oats with 3 tablespoons caster sugar.On medium heat you let the sugar melt and caramelize.Don't forget to constantly stir!!!!!!)

Knead the additional ingredients into the dough.
Now you can shape your cookies.
Put them on an oven tray with baking paper and bake them for 12-18 min depending on the thickness.

You can basically add anything you like to the basic dough: dehydrated fruit,cornflakes,raisin,chopped/toasted nuts,lemon zest,orange zest,amaretto( yum!),whole grain flour,bananas etc..........
