Reibekuchen Salad (German potato fritters)


Hi dolls

Yesterday my little German tummy was screaming at me : " Heeeey,are you forgetting your roots? I like Greek food,but pleaaaase pleassee feed me with something German"
Ooookay tummy!
This recipe is a real time saver,because the batter for the fritters is soo quickly made.

You need :
Your favorite Salad
1 small potato (finely grated)
1 egg
5-6 tablespoons flour
pepper
salt

frying oil

For the dip/dressing:
200 gr of yogurt (If you can find greek yogurt,go for it!)
1 scallion (sliced thinly)
1 teaspoon lemon juice
a dash of garlic powder or 1/2 clove pushed through the garlic press
pepper salt

To start off,squeeze all the juice out of the grated potato shreds and place them in a bowl.Add the egg and seasoning,then add the flour.Mix well to avoid lumps.
Add 4 tablespoons of frying oil to a non stick pan and let the pan get hot.With a teaspoon place a small amount of potato batter in the pan and flatten the batter so it cooks evenly.Turn the heat down a bit,because you don't want charred Reibekuchen with a raw center.
Once they are golden brown,remove them from the pan on to a paper towel to drain the excess fat.


For the dip simply mix all the dip ingredients well.
Serve the hot Reibekuchen with your salad and the yogurt dip/dressing,but if you want a separate dressing for your salad,just go with your favorite one.

German Rotkohl (Red sweet and sour cabbage)


Hi dolls,

This dish is one of those dishes I didn't like as a child,but now that I am older I love it to death.
Especially in Bavaria this dish is served with meat,but it can also be paired with loaded mash or fish.
Served on a bed of salad,it creates a beautiful composition of texture and flavor.

You may also make a big batch and fill it into glasses and preserve it.

You need:
1/2 head of red cabbage
2 Granny Smith apples
150 ml red wine
100 ml of vinegar or apple cider vinegar
olive oil water

pepper salt and a pinch of sugar

The recipe is pretty easy!
Chop your cabbage up into stripes,peel,core and dice the apples.
Place apples and cabbage in a large pot and add the red wine and vinegar.Add about 200 ml of water and season.
Bring to a boil and simmer for 2-3 hours.Once the water evaporates,add some more.I usually need to add water 3 times.
When the cabbage turns deep purple,stop adding water and simmer until the majority of liquid has evaporated and check on the seasoning again.

The other things on my plate are loaded mash (Onions,curry paste and sausage) and some smoked fish.

Fillet of Cod with German Bratkartoffeln (pan fried potatoes)


Hi dolls!

Today's dish is quite easy!And it gets even easier if you have left over boiled potatoes!
Bratkartoffeln mean Pan-fried potatoes and every Region in Germany has a different recipe.Some use egg,some use bacon,some use onion and so on.
My favorite Bratkartoffeln are with paprika spice and little onion bits.

The cod should still have his skin on.

You need:
2 fillets of cod with skin
pepper salt lemon olive oil

For the Bratkartoffeln:
6 small potatoes
1 shallot (coarsely diced)
pepper salt paprika
olive oil

Cut you cod into large pieces and season them with pepper/salt and while you do that let a pan get hot (not burning hot).
Add 4-5 tablespoons of olive oil and fry the cod skin-side down for 1-2 minutes(Until the skin is crispy).Turn the cod carefully and fry it on the other side for 1 minute.Remove the cod from the heat and drizzle with lemon juice.
Keeping the skin will prevent the fish from getting dry and disgusting.You don't have to eat the skin ;)

If you have boiled potato leftovers,just fry and season them in a hot pan with olive oil and shallot until they reach the desired color.
In case your have fresh potatoes,boil them either with the peel or without.I boiled mine without the skin,because I added 2 carrots to boil together with the potatoes.
Once the center is soft,drain the water and let them cool for 10 minutes.
Now fry them as described above.
Of course you can also fry the carrots a bit! It is delicious !!!

Christmas prep time!
Oh boy the menu is done.I am so excited! I am responsible for the main dishes for the Greek family *yuppie* (Been dreaming about this moment many years) 
So it is a honor,that they trust me with preparing their food.
-Traditional Rooster stuffed with rice,liver,raisins,minced meat,chestnuts and other traditional Greek things :D
-A ragout of venison and mushrooms
-Greek Style Baked Potatoes
-Different Canapes with homemade Liver Pate (German Leberwurst) and cucumber,smoked salmon with a dill cream cheese mix

German Lebkuchen married with Greek Karidopita (Καρυδόπιτα)


Ηι Dolls!

What happens if you marry the German Lebkuchen (Leb-koo-chen) with Greek Karidopita (Ka-ree-doh-pita)??? I don't know how you can call the result,but it is yummy! The juicy,aromatic lebkuchen which oozes Christmas spirit and the walnuts and fluffiness of the Karidopita.

You need:

250 gr sugar
5 eggs
300-400 gr honey
2 tablespoons black molasses or maple syrup
200 gr finely ground walnuts
150 gr coarsely chopped walnuts
20 gr cocoa powder
1 teaspoon ground cinnamon (powder)
1/2 teaspoon ground ginger (powder)
1/2 teaspoon ground clove
500 gr flour
120 gr butter
1,5 teaspoon baking powder
a dash of salt
a dash of pepper
some orange zest or orange blossom extract (optional)
and some milk or other liquid

Decoration: Caster sugar,sprinkles,chocolate (anything possible)


Beat the eggs,sugar,butter,honey,molasses and the spices with an electrical mixer until smooth and foamy (approx 5 min).Fold in the flour,baking powder and the walnuts.If the dough is too stiff,add some milk and mix well.
Let the dough rest in the fridge for 10 minutes.
Line a large baking tray with non stick paper and spread the dough.Bake for 12-20 min on medium high heat (175* Celsius).Make the tooth pick test to be sure the cake is done in the middle.

Let the cake cool and cut it into little squares.Decorate however you wish :)

Oktoberfest and blah blah

Hello Hello

So the Oktoberfest food was a success.2 Bretzel buns were left at the end,which means they were yummy.The beer was bad bad bad (5 liter barrel Weissbier ) because either the brand was bad or the barrel wasn't opened properly.

But not getting drunk was a better choice after all.
So here is a pic of the 'grand buffet'

All those goodies served on a Christmas platter :D

Let's start with the blah blah.

Point 1. : Greece vs Turkey
Well well well.I am not going to publish any comment that says bad things about Greece or any other country.If the Greek people and the Turkish people don't like each other,that's ok.But my Blog is certainly not the right place to express hateful feelings or to be a racist.

Point 2.: Beggars
Some younger kids/teenagers apparently think that they could beg for make up."Pliz send me make up."
Since all the emails were in Greek language I will answer in Greek:
" Den eimai o agios Vassilis!"(I am not Santa clause)

Point 3.: Viagra
Sorry dear companies that sell Viagra,I am not interested in advertising,reviewing or taking Viagra.
I am female and I am not physically able to review Viagra.

Point 4.: Today
Today is one of those lazy days,where I simply can't get myself to do something useful.I managed to buy pet supplies and a sandwich which will be my breakfast,lunch and dinner.
That did not go as I planned.The evil Sandwich Lady here apparently forgot half of the things I wanted to have in my Sandwich.

Yeah great!Why is the best sandwich place in the whole wide world so far away?
Why does this town not have a good fast food place?We have a lot ff places,but they all suck.

I will eat an apple now and drink a cup of black tea with peach/mango flavor.With milk and whipped cream!

And maybe after I'll do some chores.

Brezeln with bacon and onion

Hello

Today's motto is : " O'zapft is!" Yes we are having a mini Oktoberfest here at my house.
Sausages,Beer and of course Brezeln.I refuse to call them soft Pretzels sorry,I just can't do that.
Plain Brezeln are cool,no question,but I wanted to try out to add bacon and onion dice to the dough.

YUM! They are perfect.
Simply follow the recipe HERE
Add 1 finely diced onion and 5 strips of diced bacon to the  dough.



I am gonna serve these babies with some a bowl of cream cheese.YUM

Kraeuterbutter (German 'herby' butter)


Helloooooo

Kraeuterbutter is something essential for me.I can't live without it.
It is a piece of butter with fresh herbs inside.The recipe varies from region to region.
You can use this butter in so many ways:
On fresh,warm baguette
On your Steak
On your veg
You can cook with it and give a nice flavor to foods.

You need :
75 gr real Butter
1/4 clove garlic
2-3 tablespoons fresh parsley
1/2 teaspoon fresh dill
salt pepper
3 drops of lemon juice
1/2 teaspoon fresh chives

Put the butter in a bowl and put it in a warm room for 30 min so it softens,but doesn't melt.
Chop the herbs and the garlic as fine as you can and then crush them in a mortar ,so they release their aromatic oils.
Now mix them with the butter and the lemon juice.
Fill in a clean container with lid or roll it in a wax paper.
You should make the Kraeuterbutter one day in advance,because it is even yummier the second day.
You can freeze it or keep it in the fridge for 1 week.
I freeze it in small portions.I use little plastic containers from the Pizza delivery.

Maultaschen (German Ravioli from Swabia)


Hi
This recipe is not the quickest,but it's worth the work.It was actually the first time I made Maultaschen by my own.My mistake was,I made them too big.But even though they are a bit bigger than the normal,they are so tasty.

You need
For the noodle dough:
300 gr all purpose flour
two eggs
3 tablespoons water
1 tablespoon Oil
1/2 tablespoon salt
1/2 tablespoon dried thyme


For the filling
100 gr ground pork
100 gr boiled spinach
1/2 spring onion
1/2 onion
1 slice old toast
1 egg
1 tablespoon chopped parsley
1 1/2 tablespoon chopped dill
1/4 tablespoon dried majoram
salt pepper nutmeg

broth

First prepare the dough.Mix all ingredients together and knead for 5-10 min until silky.Chill for an hour

For the filling you need a food processor,that is able to grind meat.
Put all the ingredients in the food processor and grind until the filling becomes a thick paste.

Brink some broth to a boil (1,5 liters).
Roll out the dough very thin.With a dough knife cut out small rectangles.
Place 1/2 teaspoon of filling on top of each rectangle and fold over the rectangle and pinch the edges with a fork.

Boil the Maultaschen for 20 min in the broth.

The little dumplings in my soup are made from the filling and some semolina.

Brezel Pretzels



Hai ^^
I can't get used to using the word pretzel for a thing that I've know as Brezel for my whole life.

Brezels are just lovely.
I love to do mine in a bun/roll shape,cuz they make pretty damn good sandwiches.

1 cup of warm water
1 package of dry yeast
1 cup all purpose flour
1/2 cup pastry flour (soft flour)
4 tablespoons of butter
1 tablespoon salt

Make a nice dough from all these things and cover the dough with a towel and let the dough rise in a warm place for one and a half hour.

When the dough has risen you can shape it into pretzels or anything you like.
Then it is time to prepare the pretzel bath.
1 1/2 liters of water
1 tablespoon bicarbonate soda
2 tablespoons of baking soda
a big slotted spoon

Mix the water with the soda and bring it to a boil.
Take one of your pretzels and place it on a slotted spoon.
Dip it in the boiling water for 20-30 seconds.
Then place it on an oven tray with baking paper.
Sprinkle the pretzel with coarse salt.

Bake the pretzels at 200 degree celsius untill they got a nice brown colour.
Enjoy with butter or philadelphia cream cheese.
