Hi dolls
Yesterday we had visitors and I wanted to make a cake to welcome them
I baked a Japanese Cheesecake with a little twist.
You can find the basic Japanese Cheesecake recipe Here
That's a great recipe,but I made some changes :
Instead of cream cheese I used 2% fat Greek Yogurt and added 150 gr of coconut shavings to the batter.
To make it look a little more exciting I split the batter in half and added 4 tablespoons unsweetened cocoa powder to one of the two batches.I simply added black batter and white batter randomly to the pan.Because the cake was supposed to be finger food,I baked the cake inside a bundt cake pan.
For the icing I used 15 Kinder Riegel Bars,10 of them were melted and spread on top of the cake and the rest 5 were coarsely chopped and sprinkled on top for a fun black and white pattern.
But you can use any chocolate filled with a solid milky cream inside.
The cake was great and the three pieces on the picture are the last ones sadly :D
Well it's smart to bake when visitors come, because the more cake they eat,the less temptations await me in my fridge.

Vegan Coconut cup cakes
Hi dolls
I am currently living dairy free because I suspect that I have a problem with the lactose. But it could also be stress related,so I was advised to go dairy free for a month and keep track of my tummy's reaction to it.
Thank god there is a great variety of dairy free products out there.Even dark chocolate can contain dairy to make it richer,so you gotta be careful and check the ingredients.
And vegan cream cheese kicks ass! I always loved the tofutti cream cheese very much.
Enough with the blahblah, let's get down to business dolls!
You need:
70 ml granola oil or olive oil
200 gr flour
25 gr corn starch
170 gr sugar
2 teaspoons vanilla extract
1 tablespoon apple cider vinegar
3/4 tablespoon bicarbonate soda
1 teaspoon baking powder
100 gr dairy free dark chocolate chips
a dash of salt
100 gr of dairy free chocolate chips and 5-6 tablespoons of coconut shavings.
Simply mix the wet ingredients together with an electric mixer or heavy hand whisking, then add the dry ingredients.Fill your cup cake paper molds 2/3 of the way and bake for 15-30 min at 180 degree Celsius (Medium high heat)
Let the cupcakes cool, sprinkle with coconut shavings and then drizzle with chocolate. You can also do it the other way around, but I hate getting coconut shaving everywhere.
Vegan cupcakes rule!

No Bake Apple Pie
Hi dolls
This weekend we had workers here,so my usual Sunday-Pastry session had to be limited to 30 minutes. While looking for no bake recipes I came across this amazing recipe, which is sooo yummy:
http://www.freecoconutrecipes.com/index.cfm/2011/5/2/favorite-no-bake-apple-pie
The apple pie might not look as stunning and beautiful as a normal apple pie,but taste wise it is 20 times better, more adventurous than the average apple pie.
As usual I did not have all the ingredients,so I just skipped the raisins and added 100 gr of icing sugar to the crust and to the apple/pear mix, because I was afraid it wouldn't be sweet enough.
Thank god I added extra sugar !
What is your favorite no bake recipe?

Caramel swirled carrot cupcakes
Salut!
Marrying carrot cupcakes with caramel was certainly a risk, but it was worth it.The cuppycakes turned out very moist, delicious and well balanced.
For the caramel you will need to follow the recipe of the dulce de leche caramel.
You can also use caramel drops from the supermarket of course.
You need:
200 gr flour
40 gr whole grain flour
1/2 sweet apple (grated)
1 large carrot (grated)
100 gr ground walnuts
50 gr coarsely chopped walnuts
3 eggs
100 ml milk
100 ml olive oil
200 gr sugar
1 teaspoon ground cinnamon
1 1/2 teaspoon baking powder
1 teaspoon pure vanilla essence
Mix all the ingredients with an electric mixer, fill into greased cup cake molds.
Add coarsely chopped caramel into each filled cup cake mold and bake for 20 min at 180-200 degree Celsius (Medium high-high heat)
Once again,if the batter is too runny, add flour,if it is too stiff, add milk.It is always good to have extra flour or milk in the kitchen when baking.

Panettone (Italian yeast cake)..............................Redemption
Hi dolls,
Phew! Finally! After 2 huge panettone fails,I managed to bake this yummy treat. My previous attempts literally blew up (dough had risen too much during the first minutes of baking and half of it ended up on the bottom of my oven).
Then I told myself to screw the traditional Panettone shape (Oversized muffin) and bake it in a normal bread mold.
I used THIS recipe ,but I used real orange and lemon zest and a tablespoon of orange blossom water, because I don't like mixed peel.
And to get rid of some leftover ground almonds,I exchanged 70 gr of flour with the finely ground almonds.Since I did not have enough sultanas,I just added raisins.
In order to give the sultanas (and raisins) a little kick of flavor,I mixed them with 1 teaspoon of rum and let them soak for 10 min.
Thank god this one worked out!
Christmas is over, but who cares :D I can eat Panettone all year around.
What is your favorite Christmas treat, that you could eat all year long?

Raspberry Cheesecake
Hi
Cheesecake soothes soul ache,I am the living proof for that.
Haha, well I love cheesecake,I cannot say no to it.Usually I make a whole cheesecake and I will end up eating it for 3 days. Not good! So this time I just made half of my usual recipe. If you want a whole 23 cm spring form, double it up.
125 gr digestive biscuits (crushed)
50 gr butter,melted
1 tablespoon vanilla essence
300 gr cream cheese (unsalted)
70 gr icing sugar
150 ml heavy cream or cool whip ( I used cool whip)
a dash of cinnamon
For the topping:
100 ml raspberry sauce (I don't have access to raspberries here :( )
-Small molds, glasses or springforms and baking parchment paper
Line your molds with parchment paper,if you use a glass for your cheesecake, skip this step.
Combine crushed biscuits with the melted butter and season with cinnamon.Firmly press them into your mold/form/glass and chill for 1 hour.Mix cream cheese, icing sugar and vanilla with the electric mixer until well combined and smooth.Gradually add the cool whip while continuing to mix.
Spread the mixture on your biscuit base and try to make it look smooth and pretty.
Let the cheesecake set over night and un mold it.(Springforms are soooo handy!!!)
Now you can add the raspberry sauce on top.
Done :D
It was the first time I used my mini spring forms.Wow I finally produced a pretty cheesecake.I usually served mine in glasses, but it's so much nicer to finally eat it from a plate.

Two colored apple cake with peanuts
Hello
I couldn't just sit around and wait for the day to be over.
So I went to the kitchen to conduct an experiment again.I have already gobbled down two slices of the result, which means that it was good.
It is a very autumn-y cake with infused apples, caramelized peanuts and a chocolate glaze.
For the cake you will need:
200 gr flour
150 gr soft butter or margarine
150 gr sugar
50 gr corn starch or instant vanilla pudding powder
3 eggs
25 gr cocoa powder
1 teaspoon baking powder
100 ml milk
For the caramelized peanuts:
150 gr peanuts (put in blender and give 2-3 impulses so they are roughly chopped)
50 gr icing sugar
1 tablespoon water
For the apple filling
2 apples ,don't use sour green apples (peeled, diced)
3 tablespoons cola
70 gr sugar
ground : cinnamon, clove, ginger (a good dash of each)
For the glaze:
8 tablespoons icing sugar
2 tablespoons cocoa powder
2-3 tablespoons of water
Mix the ingredients(except of the cocoa powder) for the cake together until you have a smooth, not too runny dough.Use a round cake mold and line it with non stick baking paper.Fill in half of the dough.Add the cocoa powder to the dough left in your dough bowl and pour it on top of the white dough.
Bring the apple filling ingredients to a boil in a small pot and boil at high temperature for 5 minutes.Strain the apples so the cake won't get too mushy.Randomly place the apples on the cake and push a few inside the cake. This will keep the cake extremely moist.
Now you need to caramelize the peanuts.Put them in a non stick pan with no oil (!!!!) and toast them on medium high heat for 20 seconds.Add the icing sugar and let it melt.Add the water and stir well.
Once the water has evaporated and the peanuts are becoming sticky, quickly spread them on top of the cake.
Bake for 20-25 min on medium high to high temperature (190 degree celsius)
Take out the cake, but don't switch off the oven yet.
Now you will need to make the glaze: Mix the ingredients and generously brush on the cake and put the cake back in the oven for 1-2 minutes.
Thats' it.
Yummy,chocolate-y,moist cake with a hint of tartness from the apples and the crunch of the cocoa glaze mixed with the caramelized peanuts <3

Chocolate cake with infused pears
Hey dolls
(Supersecret Limited trend edition cake :D)
This cake is perfect for autumn and it can be made with the double amount of pears. But since I am the only pear eating person in this household I had to put the pears on top of the cake so the cake can be eaten by pear haters.
You need
5 medium pears (peeled,removed seeds,cut in 6)
1 star anise
1 cinnamon stick
1 vanilla pod (scrape out the vanilla paste)
100 gr sugar
2 tablespoons Grand Manier
Put the above ingredients in a small pot and bring to a boil until all the sugar is dissolved.Let the pears rest and infuse for at least 2 hours.
For the cake:
5 eggs
150 gr sugar
50 gr brown sugar
a pinch of salt
200 gr cocoa powder
200 gr all purpose flour
50 gr soft pastry flour
1 1/2 teaspoon baking powder /baking soda
100 gr ground hazelnuts
200 gr melted margarine
150 ml milk
3 tablespoons Grand Manier
1 tablespoon vanilla extract
the 'juice' of the infused pears
5 tablespoons honey to brush the cake
Beat eggs, sugar, brown sugar and margarine until foamy.Add the rest of the ingredients and mix well with an electric mixer or a balloon whisk.
Put the dough in a greased cake mold and randomly place the pears on top of the dough. You may also push some pears to the inside of the cake.
Bake at medium high temperature (180 celsius ).To check if the cake is ready, pierce it with a bamboo skewer right in the center. If the skewer comes out clean, the cake is done.
5 minutes before the end of baking time, brush the cake with honey.
Done :D
I made the cake yesterday and now only half of it is left *haha*

Diples (Greek sweet treat with syrup and walnuts)
Howdy!
This recipe is not for beginners. You should know the basics of handling pastry in order to succeed with the diples.
Diples are crunchy and sweet and they certainly capture the flavors of Greece.
In Crete they call them Kserotigania.I actually ate my first dipla in Greece and I totally didn't expect this kind of flavor explosion in my mouth.
I tried tweaking the recipe, but the results were not that great.Vanilla tastes horrible in diples!
You need:
2 eggs
2 egg yolks
a dash of salt
the zest of 1/4 orange
the juice of 1/2 orange
1/4 teaspoon baking powder/baking soda
300 gr all purpose flour
100 gr pastry flour
50 gr ground walnuts (finely ground)
1 liter of oil for frying
For the syrup:
250 gr Almond blossom Honey
250 gr Thyme blossom honey
1 cinnamon stick
50 gr brown sugar
75 gr sugar
For garnish: 50 gr walnuts (roughly chopped, don't appear in the pic used sesame seeds instead)
With a mixer beat the eggs, yolks and baking soda for 10 minutes.(yap 10 min)
While still beating the mix add orange zest and juice very slowly.Add finely ground walnuts.
With your hands (gloves :D) knead in the flours, until you have a semi firm dough.
Chill it for 3-4 hours in the fridge wrapped in saran wrap/cling film.
Dust your working space with flour.Better too much flower than too little!!!!
While working the dough, keep your hands dusted the entire time!!!!!!
Cut the dough in 2 portions and with a thin rolling pin roll out the dough very thinly and evenly.
With a pastry cutter cut the dough into rectangular strips that are 5,9 inches (15 centimeter) wide and 11,8 inches (30 centimeters long).
If the dough is sticky, dust hands, rolling pin and working surface with flour.
Heat up the oil in your deep frying pot/deep fryer.Wrap each strip around a fork, dip the dipla in the frying oil and fry until it starts to puff/rise and gets a light golden color.
Coool the diples on a cooling rack.
Boil the syrup ingredients on medium low heat for 8-10 min while stirring every once in a while.
You can either dip your diples into the syrup or pour the syrup over your diples while they are stacked in a bowl.
Sprinkle with walnuts.
If you are not a fan of syrup, you can skip the syrup steps and use pure honey instead.

Old fashioned lemon cake
Hi Dolls
This is a recipe from my Grandma and it was my favorite cake when I was a small.I still love the smell of this cake and it almost makes me nostalgic. When my grandma baked this cake she always left some dough in the bowl so I could eat it.Of course my tummy would hurt every time, but I was so in love with the taste of this.
You need:
200 gr Butter (room temperature)
200 gr sugar
1 lemon (zested and juiced)
4 eggs
90 gr corn starch
3 teaspoons baking powder
200 gr flour
100 ml buttermilk
1 teaspoon vanilla extract or 1 package vanilla sugar
for the frosting :
200 gr icing sugar
4 tablespoons lemon juice
Mix the cake ingredients together with a balloon whisk and chill for 30 min.Bake the cake in a an old fashioned tubed cake mold.Bake for 20-30 min at medium high temperature. To test if the cake is ready pierce it with a bamboo skewer and pull the bamboo skewer out.If the skewer comes out very clean that means your cake is ready.
When the cake has cooled for 15 min,you can frost it.Combine icing sugar and lemon juice until you have a thick, white runny, but not too liquid texture.Spread the frosting on the top of the cake.If you want you can sieve some extra icing sugar on top when the frosting has almost dried.
I baked the cake in the late afternoon and I was not sure if the pictures would come out well.So I cut a slice, frosted it and literally ran outside to catch the last sunlight. That's why there is frosting all over the plate *xixixix*

160 gr butter
1 teaspoon baking powder
150 gr sugar

200 gr sugar
4 tablespoons water
400 gr ground hazelnuts or almonds
1 teaspoon vanilla extract
5 tablespoons apricot jam

Spread the dough for the base on a large baking tray with a rolling pin or your hands.
Cover the whole base thinly with apricot jam.
In a saucepan melt the butter, sugar, vanilla extract and water and bring to a boil.Mix the ground nuts in and remove from the fire.
Now fold in the egg whites carefully and spread the nutty mixture on the base.
Bake on medium high temp (175 Celsius ) for 25-30 min.Now cut your treat into little triangles quickly while it is still hot.A pizza cutter works perfectly.
Melt the chocolate in a bain-marie or in the microwave and dip your triangles into the chocolate so that all 3 sides are covered in chocolate.
Instead of the apricot jam you can also use marzipan and spread it all over the base.

Mini donuts

Hello!
I have a sweet tooth and I turn into a chocolate craving zombie every once in a while.
Last night I wanted something rich and full of chocolate.
You need:
400 gr soft/pastry flour
100 gr whole grain flour (so we can pretend we are eating healthy XD)
active dry yeast suitable for 500 gr flour
50 gr melted butter
lukewarm water
2 tablespoons sugar
1 tablespoon honey
1 teaspoon salt
1 teaspoon vanilla extract
200 gr dark chocolate
Mix the flour with the yeast and add the sugar, salt, honey, vanilla and the butter.
Now slowly add water and keep on kneading until a smooth dough forms, that does not stick to the fingers. If it is too sticky, add extra flour. If it is too dry/hard,add water or butter.
Let the dough rise at a warm place for 30 min.
Roll out the dough on a floured surface and cut out little donuts with a small glass.
Pierce them with a wooden cooking spoon or with your fingers.
Place them on a floured tray and cover them with a clean towel.
Let the donuts rise for 30 min.
Now get your fryer ready on a medium high temperature.
When the oil is hot enough, fry your donuts until they are brown.
To drain access oil, place the donuts on paper towels to cool.
Now melt your chocolate either in a bain marie or in the microwave. You can also use other chocolate.
Dip in the donuts and let the chocolate cool for 2-3 hours.
If you don't want to mess around with doughs, you can use pizza dough from the supermarket and add icing/powder sugar to sweeten it.
Get creative with the frosting.Mine is simple and boring.

Chocolate cup cakes deluxe

Hello
Baking cup cakes is a science for itself.
Everybody has his little secret.I tried a lot of cupcake recipes with a lot of exotic frosting and ingredients.
BUT the best cup cakes are still the classic ones.
I took a basic cupcake recipe I found some years ago and I played with it.
Those cup cakes are for chocolate lovers who adore the bittersweet taste of cocoa.
You need:
150 gr Butter (room temperature)
50 gr sugar
50 gr brown sugar
200 gr all purpose flour
25 gr cocoa powder
1 teaspoon vanilla extract
2 large eggs
8 tablespoons Milk
100 gr dark chocolate (70% cocoa)
2 teaspoons baking powder
1 teaspoon cognac
For the frosting:
100 gr black chocolate
100 gr dark chocolate (70% cocoa)
25-40 gr icing sugar
100 gr white sliced almonds
a pinch of salt
a few drops cognac
cinnamon
The dough is pretty easy.Just mix all the ingredients except the dark chocolate.
With a dough kneading machine it takes 2-3 min.By hand it takes like 8.
Now smash the chocolate (either with a hammer on the cutting board or in a blender),but there should be still some chunks.Mix the chocolate in the dough.
Fill the dough into paper cups or a muffin pan.
Bake the cupcakes at 180 degree Celsius for 25-35 min.You can check if the cupcakes are ready.Simply take a toothpick and stab one cupcake in the middle.
If the toothpick comes out clean, the cupcake is done.
If there is still some dough sticking to the toothpick you should add baking time.
Let the cupcakes cool.
For the frosting first you have to toast the almonds in a clean pan until they get a really light color.Add the salt, cinnamon and the icing sugar.Let the sugar melt and caramelize and stir constantly.Remove from the fire and add a few drops of cognac.
Let the almonds cool and the roughly crush them with your hands.
Melt the chocolate either in a bain-marie or in the microwave. The bain marie has a big plus. The chocolate doesn't loose it's shine. But be careful:If just one drop of water falls into the melting chocolate, you can throw it.
Coat the cup cakes with chocolate and sprinkle some almonds on top.

Stylish apple pie

Ellow!
Apple pie is like the alternative way of communication between different countries.
Everybody knows apple pie......
It is amazing what different apple pie recipes you can find on the internet, but they all have something in common: Apples. =)
This apple pie is a mix of my grand grandmas secret filling and a dough combination.
For the base:
275 gr all purpose flour
100 gr pastry flour
175 gr Butter or margarine
100 gr sugar
50 gr brown sugar
1 teaspoon baking powder
1 tablespoon milk
2 eggs
2 tablespoons vanilla syrup
1 tablespoon fresh lemon juice
a pinch of salt and cinnamon
For the filling:
3 green apples (granny smith)
1 red apple
water
3 teaspoons white dry whine
1 teaspoon vanilla syrup
1/4 teaspoon cinnamon
40 gr sugar
1 tablespoon corn starch
For the topping :
175 gr pastry flour
125 gr butter /margarine
125 gr sugar
a pinch of salt
First you should make the filling.
Peel your apples, remove the core and dice them into pretty small dices.
Put them in a sauce pan and cover them with water.
Add all the filling ingredients except from the corn starch.
Bring the mix to a boil and let it simmer on medium low heat for 20 min.
Now you need a food processor or a blender.Pour the apple filling in to the blender and shortly push the button 3-4 times,so the filling becomes creamy, but still has some pieces.
Put the mix back in the sauce pan.
Mix the cornstarch with 1 1/2 tablespoons of water and add it to the filling.
Bring it to a boil and stir constantly until the filling has a creamy, not too liquid texture.
It's time for the doughs.
That's pretty simple, cuz you just need to mix the ingredients for each dough and knead it with your hand.
Get an oven tray ready and cover it with non stick baking paper.
Take the base dough and place it on the oven tray, roll it out with a flour dusted rolling pin.Take up the edges a bit.
Spread the filling on the base.
Take the dough for the topping and roll it out thinly on a flour dusted surface.
With a knife cut some stripes,in order to get that cool checked look.
Make sure you cut the stripes long enough to cover the pie horizontally and vertically.
Tuck in the ends of the stripes under the pie.
Bake the pie at 180 degree Celsius for 25 min.
If you want, you can brush the topping with an egg wash.I accidentally burned my pastry brush on the sandwich maker *LOL*...........
