Quick Creamy Curry Noodles with Tuna (Light summer dish)


Hi dolls!


Today it is unbelievably hot here and it's quite humid,so spending a long time in a tiny kitchen equals Sauna.This recipe will take about 15 minutes and it's sooo yummy.The recipe is enough for two people and the key for quick cooking is the chopping and grating.

You need:
500 ml of vegetable stock (you can use the cubed instant one)
100 ml of water
1 carrot (peeled,grated)
1 small red bell pepper (either chop it or toss it in the blender and pulse 2-3 times)
2 small cans of tuna in water (drain the tuna )
1 tablespoon curry powder
a dash of ground cumin,ginger
1 small fresh chili (chopped ) or 1/2 teaspoon chili powder
1/2 peach or nectarine (diced)
olive oil
2 portions of chinese egg noodles (those dried curly noodle bricks :D)
pepper salt
100 ml of coconut milk or plain cream
a bit of dill and  coriander for garnish
A slice of lemon

In a medium sized saucepan mix stock,water,curry powder,ginger,cumin,chili,pepper and salt.Bring to a boil and add 1 tbsp olive oil,then add carrot,bell pepper and nectarine.Boil for 5 minutes,then add the noodles and if neccessary add another 100 ml of water.
Noodles usually cook very quickly,so just follow the time instructions on your noodles.
Remove from the heat and add the tuna and coconut milk.
You may add some more seasoning (a dash of everything :)
Serve in a bowl and decorate with dill,lemon and coriander.Once you are ready to eat,squeeze some drops of lemon juice on top.

Easy,light tomato basil sauce


Hi dolls

With this heat,it is a torture to be in a tiny kitchen with no aircondition.So I try to cook quick and easy stuff that doesn't need constant supervision.This tomato basil sauce for pasta and meatballs is great,because you don't have to do a lot.

You need:
2 large,ripe,aromatic tomatoes (cut into chunky dice)
1 shallot (sliced)
1 large carrot (sliced or diced)
1 tablespoon concentrated tomato puree
1 clove of garlic
a hand full of fresh basil leafs (coarsely chopped)
200 ml of water
2 tablespoons olive oil
pepper salt
1 teaspoon sugar

In a saucepan quickly saute the shallot,garlic an carrot for 3 minutes in olive oil.Add water,pepper salt and the tomatoes.Boil for 12 minutes on medium heat.Add the tomato puree and the sugar.
Simmer until the sauce thickens slightly (3-5 min) and add the basil last minute.
Serve on your favorite pasta or meatballs.

Vegetable Bolognese sauce with soy minced meat


Hi dolls,

I really start to like the soy minced meat.It gives sauces a really nice,glossy texture and it tastes really good.
This vegetable bologese can be done with a variety of vegetables,so feel free to let your imagination play.
You need:
2 zucchinis (diced)
1 bell pepper (sliced)
2 carrots (peeled and sliced)
1 large onion (sliced)
4 tomatoes (remove seeds,finely diced)
100 ml tomato puree
500 ml vegetable stock
50 ml red wine
1-2 hand full of soy mince
freshly chopped basil and parsley (use as much as you like)
pepper salt
cinnamon

Optional: 2 boiled eggs (diced) ....I just love eggs in my bolognese
a can of mushrooms
Place the diced vegetables in a pot and cover them with vegetable stock and some water.Bring to a boil and once it's boiling season well,cook for 10-12 minutes and drain half of the stock/water.
Now add red wine,tomato puree,basil,parsley,soy minced meat and season well.
Simmer for 10 minutes and serve with your favorite pasta.

Linguine with broccoli,beans and smoked sausage


Howdy!

Cooking sometimes can mean to work with what you have.You can't always have the best ingredients as a normal home-cook.
Especially when you had no time for grocery shopping the options may seem limited,but with a bit of creativity and craziness there is always a dish or two you can improvise.

You need:
2 portions of Linguine Pasta
2 hands full of frozen green beans
2 hands full of frozen broccoli
150 ml heavy cream
2 smoked sausages of your choice (sliced)
pepper salt nutmeg
olive oil
water


Because the sauce and the broccoli cook really quick,you can boil the pasta and the beans together.My Linguine took 12 min to cook and the beans took the same to be tender,so it is a perfect match.After 10 minutes of cooking time,add the broccoli
In a small saucepan quickly color the sliced sausage in a 1 tablespoon of olive oil.Add cream and season.Now mix the linguine with the sauce and enjoy

Extremely quick and yummy!

Tuna Pasta Salad


Howdy dolls!

Since last night I was craving for this salad,so you can imagine my mood when I purchased the ingredients.
It's always so exciting to make something you are craving for.
This salad doesn't have any rules! You may add or remove things from the ingredient list.

3 portions of bow tie pasta (Boil until al dente,then rinse with plenty of cold water)
2 carrots (peeled,grated)
1/4 head of cabbage (chopped julienne)
1 tomato (remove seeds,slice)
1 red bell pepper (diced)
5 pickles (diced)
1-2 tablespoon chopped cilantro
1 spring onion (sliced)
100-120 gr cream cheese
the juice of 1/2 lemon
pepper salt
1 can of tuna (drained)

Your pasta should be boiled,rinsed and cooled.
In a large bowl mix the vegetables,the tuna,the cream cheese and the spices.Add the pasta and season again if needed.Mix well and chill for 1 hour.


It's pretty easy to do.You may add any vegetable you like.

Vegetarian Ramen with Brussels Sprouts


Hi Dolls,

You must think I am crazy.Putting Brussels Sprouts into a Japanese soup??Well,throwing away perfect sprouts is not good.So before they go bad,I wanted to use them.
Ramen is a really nice soup for cold days.And because there are noodles and vegetables inside it is healthy.The best part is,that it is a quick soup.

You need:
2 portions of Ramen noodles
1 carrot (thinly sliced)
1/2 red or green bell pepper (thinly sliced)
1 spring onion (sliced)
1 small can of bean/bamboo sprouts
1 liter vegetable stock
10 brussles sprouts cut in 4 
2 sachets white miso
300 ml water
1 tablespoon soy sauce
1 tofu omelette (optional)
pepper salt olive oil

Bring the water and the vegetable stock to a boil and add the vegetables.Boil for 4 min.Remember slicing thinly is the key to a quick soup.And a short boiling time won't kill the vitamins.
Now add the miso paste,soy sauce and the noodles.Boil the noodles (Asian Noodles usually cook within 2-4 min).Taste and season.Drizzle about a tablespoon of olive oil on top and serve with a tofu omelette.
Btw: The tofu omelette was from a store in a package of 4.They are not that bad,but the texture reminds me of a wet sponge.

Brussels Sprout Pasta with cram and bacon


Hi dolls

When I was a kid I hated Brussels Sprouts,they were stinky and smelly and had this awful bitter taste.
Little did I know,that the disgusting flavor comes from overcooking them.Then I tried them in a restaurant and I was finally able to taste the sweet,cabbage-y flavor they had.From that day on they are my favorite winter vegetables.

You need:
400 gr Brussels Sprouts (Cut off the very end of the stem)
200 ml cream
4 strips of bacon (diced)
2 Portions of your favorite pasta (I chose fresh Linguine)
Pepper,Salt Nutmeg
Butter
Steam or boil the Brussels sprouts for 10 minutes.Drain the excess water.In a small saucepan fry the bacon dice for 2 minutes in butter.Add the Brussels sprouts and saute for 2 minutes.Season well.
Add the cream and season again.Bring to a last quick boil and set aside.

Boil your pasta according to the instructions and enjoy it with the Brussels sprouts sauce.

Pappardelle with beet greens and smoked turkey


Hello Lovies

Beet greens and greens like dandelion and other wild greens are so underestimated.In some countries you get them for free,because beet greens are 'trash'.
I wanna cry if I hear stuff like that!
 Here in Greece greens are a part of our culinary culture,because we have a lot of beautiful edible wild greens here.
And they are healthyyyyy as hell! Nails,Hair and skin will thank you for eating those.

You need
400 gr fresh beet greens (cut off the majority of the stalk)
the juice of one lemon
1 clove of garlic
1 shallot (diced)
water
1 carrot (shaved into pappardelle with a vegetable peeler)
170 ml heavy cream
8 slices smoked turkey (diced)
pepper,salt,nutmeg
some butter

2 portions of fresh Pappardelle pasta

First you have to clean the greens really well.Wash them 2-3 times.
Put them in a deep pot and cover them with water.Add the garlic clove,lemon juice and a good portion of salt.
Bring the greens to a boil and boil for 12-15 min.Drain the water and search for the whole garlic clove.
In the same pot melt 2 tablespoons of butter and quickly saute the turkey dice.Crush the garlic and add it to the turkey.Since the garlic was boiled it is going to have a very soft and creamy taste.
Add the shallot,the carrot and the greens.Keep stirring and saute-ing for 3-4 minutes.Add the cream and season well.
Set aside.
Boil the Pappardelle according to the instructions on the package and once they are done,drain the water and put the pappardelle in the pot with the greens and mix well.

Season again if needed.

Quick pasta with mushrooms and cream


Helloooooo


This recipe is really quick and requires only one pot.(Yay less dishwashing)
I recommend using fresh mushrooms for this dish.

You need:
2 portions of pasta (I used fusilli)
150 gr mushrooms (cleaned,cut in 3)
150 ml cream
1 clove garlic(finely chopped)
some parsley
some mini mozzarella balls (cut in 4)
pepper
salt
olive oil

Boil your pasta according to the instructions on the package,drain and set aside.In the same pot quickly saute mushrooms,garlic and parsley with some olive oil and of course seasoning.
Once the mushrooms get color,add the cream and season again if needed.Simmer for 3-5 min and add the mozzarella balls at the end and stir well.Put the pasta in the pot with the sauce and mix well.


As you can see the recipe is easy with a small list of ingredients.Of course you may add whatever you wish.And now that the mushroom season started in a lot of countries,you can also use wild mushrooms.

Gnocchi al forno (men food)


Howdy!
This is a super easy recipe that will wow him and his friends during the halftime of a soccer match or football game.

You need;
3 portions fresh Gnocchi
100 ml cream
4 slices bacon (diced)
some grated Mozzarella,Cheddar Pecorino
1 egg
pepper salt nutmeg

Mix the cream with an egg and season.Place the Gnocchi in an oven proof dish and cover them with the egg/cream mix.Sprinkle some cheese on the Gnocchi and mix.Sprinkle some more cheese and add the bacon dice on top.
Bake until golden brown at high temperature.

Pasta Salad with a Greek twist


Hellooo

I don't like the usual pasta salads that combine mayonnaise with Pasta,but this one is different.It is quick,light and healthy.

You need :
200 gr whole wheat Spaghetti
100 gr low fat yogurt
1 small cucumber (removed seeds,grated)
1 carrot (peeled,grated)
1 clove of garlic (crushed)
1 red/orange/yellow bell pepper (half grated,half sliced)
1 egg (boiled 7 min)
pepper,salt
2 teaspoons lemon juice
1 teaspoon dill (finely chopped)

Mix yogurt,carrot,cucumber,grated bell pepper and garlic.Add the dill and lemon juice.Mix well and season.
Boil your pasta until it is al dente.In a sieve rinse the spaghetti with cold water.Shake/toss out all excess water.
Mix with the yogurt immediately.
Season again if needed.
Garnish with egg and bell pepper slices and serve.

Homemade frozen skillet meal


Hi

There are a lot of occasions where a frozen skillet meal comes in handy.Especially when you are in a hurry or simply not able to cook something fresh,those frozen meals can save the day.
But they are quite expensive when you buy them in the store.5-6 bucks for 2 portions?No way.
So now it is unbelievably hot here and my kitchen literally turns into a burning hell when I use the stove or the oven.

This is just a vegetarian version of a frozen pasta meal.But you can always add meat or fish to it.

For spaghetti with mixed vegetables and mushrooms in a creamy sauce you need:
500 gr pasta of your choice
200 gr fresh button mushrooms (sliced)
200-300 gr mixed frozen veggies (I used oriental style veggies)
200 ml cream (I used vegan cream)
5 tablespoons freshly chopped parsley
2 tablespoons freshly chopped dill
pepper salt
garlic powder
olive oil
ziploc bags (freezer safe)

Boil your pasta and frozen vegetables according to the instructions and drain the water afterward.
In a saucepan quickly saute the mushrooms with some olive oil,pepper,salt and garlic powder.
In a large pot,mix the cream and the herbs,bring to a boil and season well.
Now put the pasta,the veggies and the mushrooms in the cream and mix well.
Let the whole pot cool down a bit.
Now take your ziploc bags and fill one portion into the ziploc bag and before closing it,flatten the content of the bag,so it will be more easy to handle later.
Close the ziploc bag and freeze.
You can either thaw your homemade skillet meal in a saucepan or in the microwave.

I made 7 portions and each portion costs about 1,20 Euro.
The frozen skillet meal on the picture doesn't look that pretty,but at least I know every single ingredient and I know that it is healthy.!!!!!!And to spice it up,I added some tomato and spring onion on top.

And you can do that with every pasta,every vegetable,every sauce and every meat of your choice.
This frozen skillet meal saved my day,because I would probably have melted in the kitchen.

Easy Chicken Noodle Stir Fry


Hi Folks

It is so hot here! My kitchen is tiny and has no a/c.So I lived on take out the past 3 days.
But today I couldn't eat another bit of take out food.
So I decided I do a quick and healthy stir fry.I don't claim that this stir fry is authentic Asian-No No.It is an international stir fry for all noodle lovers.


You need:
2 chicken breasts (removed skin.,diced)
200 gr Noodles (rice noodles,egg noodles,any kind of noodle is good)
3 tablespoons sesame seed oil
1 red bell pepper (chopped)
1 cup green beans (canned are fine )
1-2 carrots (diced/julienne )
4 spring onions (chopped in chunks)
1/2 teaspoon grated celery root
1 tablespoon cilantro (finely chopped)
100-200 ml water
1 teaspoon Miso paste (red)
curry powder,ginger powder,soy sauce,turmeric,chilli powder,salt
honey,apple cider vinegar
(any veggie you like will be warmly welcomed in your stir fry)

Okay
Sprinkle  the powdered spices over the chicken and massage them in.Be generous
In a wok or a frying pan let the sesame seed oil get quite hot.Quickly fry the chicken dice for 1-2 min.
Now add the veggies,the apple cider vinegar and the honey.
Add 100 ml of water.

In a separate pan,prepare your noodles and boil them 1 minute,drain them and set aside.
Add soy sauce and noodles.
Add another 100 ml of water and the Miso paste.
Taste!!! And season again if needed.
Stir constantly while preparing the dish!
Let the noodles soak up with the liquid while simmering on medium heat.
Once it has a nice consistency,remove from the fire and enjoy.

You are more than welcome to use any spice/veg/meat you like with this dish.

spaghetti aglio olio e alio


Hi

Celebrating the glory of olive oil and garlic.This is what I consider fast food,because you just need one pan to cook and if you buy fresh Spaghetti, it will take like 7 min.I also like to add small tomatoes to the dish to cool down the garlic a bit.


You need :
1 portion of boiled spaghetti (I used fresh whole grain spaghetti)
1 clove of garlic (super finely chopped)
2 -3 tablespoons of freshly chopped parsley
5-6 cherry tomatoes (each cut into 4 wedges)
3-5 tablespoons of olive oil
(grated cheese if you like)
pepper salt

Once the spaghetti are boiled,drain them and set aside.In the same pot heat the olive oil and add garlic,salt,pepper and half of the parsley.Fry for 1 min.Add the spaghetti.Mix well.
Remove from the fire and add the rest of the parsley and the tomatoes.

Gnocchi with a creamy sauce of asparagus and spinach


Huhu!

This dish is one of my favorites of all time.I love asparagus very much and if I could find it more often,I would probably eat it every day.

You need
2 portions of fresh Gnocchi di patate (boiled)
1 spring onion (sliced)
5 asparagus "sticks" *lol* (peeled and cut into chunks)
a good hand full of baby spinach
5 strips of smoked bacon (chop it up)
1 carrot (diced)
the juice of 1/2 lemon
1 tablespoon cream cheese
100-150 ml cream
pepper salt,olive oil

Put the asparagus chunks and the carrot dice in a saucepan and cover them with water.Add the lime juice,bring to a boil and simmer for 12-15 min.Drain.
In another saucepan saute the bacon and the spring onion in some olive oil until the bacon has some light golden color.Add the spinach,the asparagus and carrots and saute again.Add the cream cheese,the cream and some olive oil and season well.

Mix with the boiled Gnocchi.

How to make instant pasta sauce edible......

In my childhood I was fed with a lot of instant pasta sauces and I loved them.In the supermarket I came across the exact same sauce that I loved as a child.
But boy oh boy when I "cooked" the sauce and ate it after,it tasted just very sour and very fake.
And I still got 1 more of those bags with the powdered instant tomato sauce....

So my goal was to make this sauce taste edible....
You need :
1 bag of your favorite instant tomato pasta sauce
2 portions of pasta (I choose whole grain spaghetti)
1 carrot (diced finely)
a hand full of baby spinach (roughly chopped)
1/2 clove garlic (finely chopped)
1 shallot (diced)
1 bell pepper (diced)
a few pickled Jalapenos
1 tablespoon freshly chopped basil
olive oil
salt pepper
oregano

Boil all your veg for 7 min and drain the water,but don't throw it away.On your cool instant sauce package you should read how much water you need.
Prepare your sauce according to the package and add the veggies and season well.
Add the basil at the very end and serve.

The result should be edible and even a little bit healthier.

Vegan Veggie Rigatoni


Servus (That is Bavarian and means hi)

Why do a lot of people think,that vegan food is bland and boring?
Vegetables can never be boring,because they are full of flavor (well except canned veggies,they are bland and boring).
'This dish is full of flavor and full of vitamins and no,it is not boring at all.

You need
700 gr Rigatoni w/o egg
1 red bell pepper
1 orange bell pepper
1 zucchini
1 carrot
some broccoli
1 spring onion
mushrooms (canned or fresh)
some cherry tomatoes
etc.....add more veggies if you want :D
150 ml soy heavy cream
olive oil
lemon garlic salt
pepper
nutmeg
1 teaspoon freshly chopped dill
1 teaspoon freshly chopped parsley


The sauce is actually pretty easy to make,it just requires some chopping skills.Chop all the veggies (the smaller,the faster they cook) and put them in a medium saucepan.Cover them with water and bring them to a boil.Let them boil for 7-12 min.
Drain the water and set the veggies aside.
Put the cream,the parsley,the dill and a teaspoon of olive oil in a saucepan.Bring to a boil and add nutmeg.
Mix in the veggies and boil for 2 min.
Season-done! Keep warm on very low heat,so the flavors can develop and you can boil your pasta!
Boil your pasta,drain water,serve with sauce!

Spaghetti with Meatball sauce


Hi

Spaghetti with meatballs is something very simple,easy to make for a crowd of hungry meatball lovers.
These meatballs are juicy,eggless,breadless and yet super moist and yummy.

You need:
4 portions of spaghetti
500 gr ground beef
1 tomato (peeled and chopped)
1 onion (diced)
1 shallot (mini diced)
1 carrot (sliced)
1 bell pepper (red or yellow,diced)
1-2 slices of chili pepper
2 tablespoons chopped parsley
1/2 teaspoon dried oregano
1 glass of red whine
1 teaspoon sugar
1 pinch of cinnamon
salt pepper,sweet paprika,olive oil
chicken stock.
concentrated tomato juice/puree


Okay,here we go.
Mix the ground beef with the shallot dices and season well with paprika,pepper and salt.
Make your meatballs (the smaller the quicker they cook)
In a saucepan let some olive oil get hot and quickly fry your meatballs until the outside is cooked.
Deglaze with the whine.
Now add the rest of the veggies and spices and cover them with chicken stock.
Let it boil for 10 min and season.
Now add 200 ml tomato juice (or 2 tablespoons concentrated tomato puree) and let it reduce for another 10 min.

Cook your pasta according to the instructions on the package or according to your taste.
I like my pasta overcooked (Shame on me!)

Maultaschen (German Ravioli from Swabia)


Hi
This recipe is not the quickest,but it's worth the work.It was actually the first time I made Maultaschen by my own.My mistake was,I made them too big.But even though they are a bit bigger than the normal,they are so tasty.

You need
For the noodle dough:
300 gr all purpose flour
two eggs
3 tablespoons water
1 tablespoon Oil
1/2 tablespoon salt
1/2 tablespoon dried thyme


For the filling
100 gr ground pork
100 gr boiled spinach
1/2 spring onion
1/2 onion
1 slice old toast
1 egg
1 tablespoon chopped parsley
1 1/2 tablespoon chopped dill
1/4 tablespoon dried majoram
salt pepper nutmeg

broth

First prepare the dough.Mix all ingredients together and knead for 5-10 min until silky.Chill for an hour

For the filling you need a food processor,that is able to grind meat.
Put all the ingredients in the food processor and grind until the filling becomes a thick paste.

Brink some broth to a boil (1,5 liters).
Roll out the dough very thin.With a dough knife cut out small rectangles.
Place 1/2 teaspoon of filling on top of each rectangle and fold over the rectangle and pinch the edges with a fork.

Boil the Maultaschen for 20 min in the broth.

The little dumplings in my soup are made from the filling and some semolina.

Ravioli soup with winter vegetables


Hi
I hate to throw away food.....I feel so bad when I throw away food just because I don't like the taste.
So today was the day to somehow use the awful frozen mixed veggies that I had bought.
The peas are very overpowering and that gives you only a few options.
So I tried a ravioli soup and it was very yummy.

You need:
2 portions of fresh ravioli.(The dried would work too,but their filling tastes like old stinky socks.
1/2 onion chopped
2 carrots sliced
a handful frozen mixed veggies
2 tablespoons of Butter/margarine
500 ml chicken/beef/vegetable stock (I used beef)
some celery leaves chopped
some parsley leaves chopped
salt,pepper

Bring the stock to a boil and add the veggies and the butter.Let it boil for 15 min and add the fresh ravioli.Mine take 4 min to cook,but that depends...better check the package of the ravioli.

And that is basically it :))
So this is another very quick meal.

Frozen veggies have a bad reputation,but they sometimes contain more vitamins than fresh veggies.The veggies are shock frosted right after the harvest and fresh veggies first have to travel to reach the supermarket.
