Reibekuchen Salad (German potato fritters)
Hi dolls
Yesterday my little German tummy was screaming at me : " Heeeey,are you forgetting your roots? I like Greek food,but pleaaaase pleassee feed me with something German"
Ooookay tummy!
This recipe is a real time saver,because the batter for the fritters is soo quickly made.
You need :
Your favorite Salad
1 small potato (finely grated)
1 egg
5-6 tablespoons flour
pepper
salt
frying oil
For the dip/dressing:
200 gr of yogurt (If you can find greek yogurt,go for it!)
1 scallion (sliced thinly)
1 teaspoon lemon juice
a dash of garlic powder or 1/2 clove pushed through the garlic press
pepper salt
To start off,squeeze all the juice out of the grated potato shreds and place them in a bowl.Add the egg and seasoning,then add the flour.Mix well to avoid lumps.
Add 4 tablespoons of frying oil to a non stick pan and let the pan get hot.With a teaspoon place a small amount of potato batter in the pan and flatten the batter so it cooks evenly.Turn the heat down a bit,because you don't want charred Reibekuchen with a raw center.
Once they are golden brown,remove them from the pan on to a paper towel to drain the excess fat.
For the dip simply mix all the dip ingredients well.
Serve the hot Reibekuchen with your salad and the yogurt dip/dressing,but if you want a separate dressing for your salad,just go with your favorite one.

Yum! I had this once at a mountain restaurant in Switzerland and it never occurred to me that it was the sort of thing I could actually make some time. I will be trying this soon, thanks for posting!
