Easy Tomato Basil Soup
Hello
This is a really easy soup,that also beginners can cook.A very healthy way to use those very ripe tomatoes in the fridge.
You need
4 large,ripe tomatoes
5 cherry tomatoes
1 shallot
a small piece celery root
1/2 carrot
a few basil leaves
olive oil
pepper,salt
oregano
chilli powder
cream
Okay,wash your tomatoes well and cut them in 4 pieces each.Remove all the seeds and the tough greenish part of the tomato.Dice the shallot,the celery root and the carrots.
In a pot with a thick bottom ,heat 3 tablespoons of olive oil and slowly roast the veggies for 5 min.
Now add 200 ml water or chicken stock.
Let the veggies boil for 15 min and puree them in your food processor with a few fresh basil leafs.
Put the now creamy tomato soup back in the pot and season well.
Adding a half teaspoon of sugar to the soup does miracles.
Add one tablespoon of cream to every bowl of soup.
I threw in a few croutons!

I've been meaning to tell you this for a while, but I've tried this recipe quite a few times now and I love it!
