Fillet of cod on a bed of veggies en papillote with red cabbage

What can I say?This dish blew me away.I am not a big fish eater and I just know the basics of preparing fish.
Walking through the supermarket I found a good offer 8 fillets of cod for like 3 Euro.
I usually buy only fillets of fish,because I don't like the mess of preparing a whole fish.So these fillets were perfect for my idea.

I saw a cooking show that shew something similar to this,just more fancy and expensive.

For the fish:
2 fillets of cod
2 medium small potatoes
2 carrots
2 lemon slices
fresh dill
fresh thyme
olive oil
Pepper,Salt,tumeric

For the red cabbage:
1/2 red cabbage
1 slice of fresh pineapple
1/2 apple
1/2 pear
3 tablespoons red vinegar
pepper
salt
1 teaspoon olive oil
water


You should start with the cabbage,because it takes quite some time to cook.
Cut your cabbage in stripes,dice the fruit.Put all the veg/fruit in a large pot and cover it with water.Bring to a boil and add the vinegar.
Let the cabbage boil on medium heat for 1-1 1/2 hours.(I boiled my cabbage only 40 min,because I had no time *lol*)
Season,add the olive oil.

For the fish that will be cooked inside baking paper:
Bring 1 liter of water to a boil and add a pinch or two of tumeric and salt.
Cut carrots and potatoes and boil them in the water for 10 min.
Season the fillets with salt and pepper.
Once the veggies are boiled,drain the water and drizzle them with a bit of olive oil and dill.
Now you prepare an oven tray with one sheet of baking paper.
Place the veggies in the middle of the baking paper and place the fillets on top of the veggies.
Add a lemon slice and some thyme and dill on top of the fillet.Drizzle with a teaspoon olive oil.
Now fold the baking paper and double fold the edges,so that the fish/veg are inside a little pocket/package.
Leave the little package on the oven tray and bake it for 15-20 min 200 degree Celsius.
