Pizza is so nice and well known all over the world.There are all kinds of Pizzas with different textures,flavors,styles and sizes.The take out Pizzas are nice,but often very greasy and heavy.And more importantly......it is insane to pay 8-15 Euro for a good Pizza.A bit of flour,tomatoes and cheese don't cost that much.
Knowing how to make Pizza saved me in so many occasions.When hungry friends come over it is nice to serve them Pizza instead of serving them dinner from the take out around the corner.
You need:
500 gr all purpose flour
500 gr soft/pastry flour
2 packages dry active yeast (check the packages,for how much flour the yeast is)
~500 ml hand warm water
1 teaspoon salt
1 teaspoon sugar
1 tablespoon honey
5-6 tablespoons olive oil
For the tomato sauce
4 big tomatoes
1 shallot
1 clove garlic
2 generous tablespoons tomato paste/puree
2 teaspoons red whine
1 teaspoon sugar
a pinch of cinnamon
Salt,pepper,basil,oregano,olive oil
200 gr Cheese of your choice (Emmental,Gouda,etc)
150 gr Mozzarella cheese
50 gr semi hard grating cheese (Parmesan/Pecorino Romano)
Ok let's start with the dough.
Mix all the ingredients for the dough together and if the dough is too dry,add some more water,if it is still too sticky,add some more flour.
Knead the dough for 5 min.Pizza has to be made by hand!!
If you are wearing nail polish,wear gloves,because you don't wanna eat nail polish chips.
Let the dough rise in a warm place for 1-2 hours.Cover the bowl with a clean cloth or kitchen towel.
To speed up the rising of the dough you can heat your oven on a very low temperature (50-70 degree Celsius)then turn off the oven and let the dough rise there.
But this just works on very low temperatures.
While the dough is rising,peel the tomatoes,remove the seeds and dice em.
Chop the rest of the ingredients for the sauce very finely.
In a small saucepan,heat some o.oil and fry the onions and the garlic until they are translucent.If the garlic burns,it has an awful taste!
Now add the rest of the sauce ingredients and season to your taste.Simmer for 5 min-done!
Grate your cheese to burn some of those calories :D ^^
Don't buy cheese that is already grated.The stuff they use to keep the cheese pieces from sticking to each other is not very healthy for us.
But a lot of companies don't use that stuff anymore.
Now the dough has risen (Tataaaaa hopefully!)
Line an oven tray with non stick baking paper.Sprinkle a little flour on the tray and on your hands.
If you use a rolling pin,sprinkle it with flour too.
Roll out the dough on the oven tray until it is about as thick as a finger.
If you have too much dough,don't throw it.You can freeze it or make some rolls.
Spread the sauce,add any extras (bacon,mushrooms,sausages...you get the idea),and then sprinkle the cheese mix on top.
Bake at 200 degree Celsius for 15-20 min.The time can depend on your oven type,so always check.
When the crust has a golden color and the cheese also has some golden spots,the pizza is ready.
