Chocolate chip cookies with caramelized peanuts


Hi dolls,

Punching a dough is one of my number one stess/anger/sadness relief-remedies......
So since yesterday was certainly not my day,I made some cookies.
As usual I followed my Basic cookie dough recipe 
I exchanged the 325 gr all purpose flour with 280 gr whole grain/whole wheat flour.

For the rest you will need:
150 gr coarsely chopped peanuts (unsalted)
5 tablespoons of powdered sugar
1 tablespoon of water
200 gr dark chocolate (coarsely chopped)
1 teaspoon pure vanilla extract

Knead the dough (and maybe give it a punch or two).......

In a dry non stick pan add the peanuts,powdered sugar and the water.While stirring slowly,let the sugar and water melt and then caramelize.Once the color of the caramel has a golden hue,remove from the heat and spread on a cooling rack with non stick baking paper.

In case your peanuts are stuck or clumped together,simply put them in a freezer bag and give them a whoop or two with a rolling pin.

Add the chocolate,peanuts and vanilla extract to the dough and knead a little to spread the goodies evenly.

And that's it :D
