Pappardelle with beet greens and smoked turkey

Beet greens and greens like dandelion and other wild greens are so underestimated.In some countries you get them for free,because beet greens are 'trash'.
I wanna cry if I hear stuff like that!
Here in Greece greens are a part of our culinary culture,because we have a lot of beautiful edible wild greens here.
And they are healthyyyyy as hell! Nails,Hair and skin will thank you for eating those.
You need
400 gr fresh beet greens (cut off the majority of the stalk)
the juice of one lemon
1 clove of garlic
1 shallot (diced)
water
1 carrot (shaved into pappardelle with a vegetable peeler)
170 ml heavy cream
8 slices smoked turkey (diced)
pepper,salt,nutmeg
some butter
2 portions of fresh Pappardelle pasta
First you have to clean the greens really well.Wash them 2-3 times.
Put them in a deep pot and cover them with water.Add the garlic clove,lemon juice and a good portion of salt.
Bring the greens to a boil and boil for 12-15 min.Drain the water and search for the whole garlic clove.
In the same pot melt 2 tablespoons of butter and quickly saute the turkey dice.Crush the garlic and add it to the turkey.Since the garlic was boiled it is going to have a very soft and creamy taste.
Add the shallot,the carrot and the greens.Keep stirring and saute-ing for 3-4 minutes.Add the cream and season well.
Set aside.
Boil the Pappardelle according to the instructions on the package and once they are done,drain the water and put the pappardelle in the pot with the greens and mix well.
Season again if needed.
