Vegetarian Spinach Puree /mash


I love every kind of puree or mash and there are soooo many different things you can do.
This spinach potato mash is yummy,healthy and 100 % vegetarian.

You need
400 gr Potatoes (peeled,diced)
300 gr spinach (I used frozen baby spinach)
1 spring onion (sliced)
1 clove of garlic (crushed)
3 tablespoons vegan cream cheese
1 tablespoon margarine
pepper,salt,ground nutmeg

Boil your potato dice until they are soft and drain them.In a separate pan you boil the spinach,the garlic and the spring onion for about 7 min.Drain the spinach and add it to the potatoes.Add the cream cheese,the margarine and season well with pepper salt and nutmeg.With a masher start mashing well.You can also use a whisk to mash the puree.

Serve with fresh tomatoes !
