Squash soup


This is the perfect match for the squash bread.
Its fun and very easy.

You need:
750 gr diced squash
200 gr diced potatoes
2 sliced carrots
150 ml heavy cream (I chose vegetable based cream with low fat/calories)
2 tablespoons olive oil
1 tablespoon chopped parsley
1 tablespoon chopped coriander
1/2 teaspoon curry powder (not the hot/spicy one)
a pinch of tumeric

Put your diced/sliced veg in a pot and cover with water.Add the olive oil and bring to a boil.Let the veg boil for 15 min.
Drain the veg,but keep the water.It is full of flavor and vitamins.
Puree the veg with the water and the cream.Season with the listed spiced.
Add the chopped parsley and keep the chopped coriander for the decoration.
