Exotic freestyle chicken.
Hello
Today was a bad day in terms of cooking.I almost finished cooking my Indian Style chicken,when I cut myself on a coconut milk can.
There was enough blood to make a splatter horror movie.
So some of the dish slightly burned,but I could save it.
You don't have to stick to my choice of veggies.I just used what I had at home.All the veggies/fruit I used are chopped in cubes/dice.
You need:
4 pretty chicken breasts (sliced thickly)
1/2 mango
1/2 baby pineapple
1 onion
1 spring onion
1/2 teaspoon ground ginger
1 crushed clove garlic
2 teaspoons green curry paste
1 teaspoon curry powder (not the hot one)
1/2 teaspoon tumeric
4-5 tablespoons chopped coriander
1-2 tablespoons honey
200 ml coconut milk
1 tablespoon soy sauce
Olive oil,pepper salt
1/2 red hot chilly (if you dislike hot food,use 1/4)
carrots(2)
squash (3-4 thick slices banana squash)
red/yellow bell pepper (1 red/2 yellow)
broccoli (leftovers approx 2 cups)
green beans (1 cup)
fennel root (1)
Rub your chicken with a pinch of salt,pepper and curry powder.Sear it in a hot pan with olive oil until it has a light golden brown color.
Set aside.
In the same pan,add all the veggies and cover them with water.
Bring to a boil and add the rest ingredients except of the coconut milk.
Let the veggies boil for 15-20 min and add the chicken.
At the end add the coconut milk and season if needed.
Serve with rice.

I don't think that this dish has anything to do with Indian cuisine.It has just a little hint of the flavorful Indian cuisine.
