Squash Bread
Hello ^^
I made the mistake to buy a huge banana squash,because it was so cheap.
So after buying it I was imagining myself eating squash soup for one week.
I was thinking about what I could do with that much squash.While watching a Tv show the saving idea finally hit my head.
In the Tv show a lady from the south talked about pumpkin bread.
So I thought that pumpkin and squash both go in the same direction taste wise.
You need :
250 gr soft/pastry flour
250 gr all purpose flour
400 gr whole grain flour
100 gr rolled/old fashioned oats
500 gr Banana squash dices
1 grated carrot
dry active yeast suitable for 1000 gr Flour
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 cup olive oil (you probably gonna need less)
1 teaspoon sugar
1 1/2 teaspoons salt
1 tablespoon honey
lukewarm water
For the yummiest crust ever:
1 tablespoon soy sauce
1 1/2 tablespoon honey
100 ml water
1 teaspoon corn starch
Ok first we prepare the squash: Put the dices in a pot and cover them with water.Bring to a boil and boil on high temperature for 12 min.Drain the squash dices and puree in the blender.
Let the squash puree cool (open window) for 10-15 min.
For the dough mix the dry active yeast with the flour(keep some extra flour).Add the squash puree,oats,soy sauce,vinegar and the honey.Mix the dough with your hands.Now gradually add water and some olive oil until a smooth dough forms.Knead the dough and add the carrot shavings/grated carrot.Let the dough rise in a warm place for an hour.
After the dough has risen you can shape it into two big breads or many small.
Now you gotta prepare the glaze.
Bring 100 ml water to a boil and add honey and soy sauce.
Mix in the cornstarch while stirring with a whisk.
The glaze should thicken a bit,but it should not be to gooey.
With a pastry brush,brush the hot glaze on the breads.
Bake at 180 degree celsius for 20-35 min (according to the size).To see if the bread is ready,stick a toothpick into the middle of the bread.When you pull it out and the toothpick is clean,the bread is ready.If it still has dough or crumbs on it,add some baking time.
You can also add sunflower seeds to the bread.Be creative ;)
