mango cream with a tropical twist


I still had some Mango leftovers and I didn't quite know what to do with them.
I also had pudding mix leftovers.....
So I tried something spontaneous and crazy.

You need:
1/2 mango
100 + 50 ml Banana juice
2 tablespoons vanilla pudding mix
2 tablespoons lemon juice
1 slice of pineapple
50 gr sugar
50 ml heavy cream
2 tablespoons coconut shavings
2 tablespoons icing sugar

Dice the mango and the pineapple.I like bigger pieces.Put the fruit in a bowl and add the sugar and the lemon juice.
Chill in the fridge for 30 min.
Put the fruit in a saucepan and add the 100 ml banana juice.Add about 5-10 tablespoons of water.
Bring the mix to a boil and let it cook on medium heat for 5-7 min.
In a small bowl mix the pudding mix with the banana juice until it has dissolved.
Add a small portion of the pudding mix to the pan and stir well.
Then add another small portion and stir.The consistency should not be too liquid.
Remove from the fire and let it cool while stirring constantly for 10 min.
Whip the cream and add the icing sugar slowly while whipping.At the end add the coconut shavings and fold it into the fruit mix.
