Exotic cream of fennel and carrot with curry
Hai!
Another quick and easy soup recipe *yay*.This soup is exotic,vegetarian and really yummy.Especially for autumn this is the perfect soup to brighten those gloomy days.
You need:
2 bulbs of fennel (peeled,chopped)
5-8 carrots(peeled,sliced)
1 medium sized potato(peeled,diced)
1 liter vegetable stock
water
1 teaspoon curry powder
100 ml coconut milk
a dash of turmeric
pepper salt nutmeg
Put your veggies in a medium sized pot and add the vegetable stock.If they are not fully covered with vegetable stock,add water.Boil the veggies for 15 min and put them in a blender together with the stock.Blend until very smooth.Now add curry,turmeric,pepper,salt and coconut milk and blend again.
If the consistency is too thick,add more coconut milk.
Put your cream back into the pot and bring it to a boil before serving.
