Creamy cauliflower with curry


Today was one of those days again where there was only a little time for preparing lunch.So I thought of doing something that requires one pot only.Boiled cauliflower and veggies in a creamy curry flavored sauce.Yum it was good.

You need:
1/3 cauliflower head (separate buds and tear apart the flowers)
1 large carrot (peeled sliced)
1 red bell pepper (remove seeds,slice)

150 ml milk
2 tablespoons flour
2 tablespoons butter
1/2 teaspoon curry powder
1 strand of Saffron
pepper salt nutmeg
some fresh parsley

Boil the veggies in salted water for 12-15 min,drain and set aside.In the same pot you cooked the veggies,melt the butter,add the curry and saffron and whisk in the flour.Once the flour sticks to the bottom of the pot ,whisk in the milk and season well with the listed spices.Put the veggies back into the pot,add some parsley and enjoy :)

It took me 25 minutes to chop,cook and eat :D
