Stuffed egg roll

The show must go on!( Sorry for the delay on the recipes <3 )

This is a quick and easy dish with mixed cultural influences.There is the Asian style egg roll which is baked instead of fried.And the tex-mex influence from the stuffing.

You need :
3 organic eggs
1 tablespoon yogurt
1 tablespoon flour
black pepper,salt, 1 teaspoon finely chopped parsley

For the filling:
1 tomato (removed seeds,finely chopped)
1 spring onion (finely chopped)
1/3 bell pepper (finely chopped)
3 slices pickled jalapenos (finely diced)
1 tablespoon cilantro (finely chopped)
1 tablespoon cream cheese
2 strips bacon (fried and diced)
pepper salt
50 gr cheddar cheese (grated)

olive oil
round oven dish

Ok Sweethearts! Let's get cooking! If you don't want to finely chop everything by yourself,as your food processor,he will be glad to do it for you.
 Pre heat your oven to a high temp.
Mix the eggs,flour,yogurt,pepper,salt and parsley and whisk until combined.Rub your oven safe round dish with olive oil,so the egg roll won't stick to it.Pour the egg mixture in the oven dish and cook it until the egg is firm.
Don't shut off the oven yet!
For the filling mix all the ingredients well,spread them on the egg roll and sprinkle with grated cheddar.
Now roll up the egg roll and pop it back in the oven for about 5 min,so the cheddar melts and all the flavors develop.
