Stylish apple pie

Apple pie is like the alternative way of communication between different countries.
Everybody knows apple pie......
It is amazing what different apple pie recipes you can find on the internet,but they all have something in common: Apples. =)

This apple pie is a mix of my grand grandmas secret filling and a dough combination.


For the base:
275 gr all purpose flour
100 gr pastry flour
175 gr Butter or margarine
100 gr sugar
50 gr brown sugar
1 teaspoon baking powder
1 tablespoon milk
2 eggs
2 tablespoons vanilla syrup
1 tablespoon fresh lemon juice
a pinch of salt and cinnamon

For the filling:
3 green apples (granny smith)
1 red apple
water
3 teaspoons white dry whine
1 teaspoon vanilla syrup
1/4 teaspoon cinnamon
40 gr sugar
1 tablespoon corn starch

For the topping :
175 gr pastry flour
125 gr butter /margarine
125 gr sugar
a pinch of salt


First you should make the filling.
Peel your apples,remove the core and dice them into pretty small dices.
Put them in a sauce pan and cover them with water.
Add all the filling ingredients except from the corn starch.
Bring the mix to a boil and let it simmer on medium low heat for 20 min.

Now you need a food processor or a blender.Pour the apple filling in to the blender and shortly push the button 3-4 times,so the filling becomes creamy,but still has some pieces.
Put the mix back in the sauce pan.
Mix the cornstarch with 1 1/2 tablespoons of water and add it to the filling.
Bring it to a boil and stir constantly until the filling has a creamy,not too liquid texture.

It's time for the doughs.
That's pretty simple,cuz you just need to mix the ingredients for each dough and knead it with your hand.

Get an oven tray ready and cover it with non stick baking paper.
Take the base dough and place it on the oven tray,roll it out with a flour dusted rolling pin.Take up the edges a bit.

Spread the filling on the base.

Take the dough for the topping and roll it out thinly on a flour dusted surface.
With a knife cut some stripes,in order to get that cool checked look.
Make sure you cut the stripes long enough to cover the pie horizontally and vertically.
Tuck in the ends of the stripes under the pie.

Bake the pie at 180 degree Celsius for 25 min.
If you want,you can brush the topping with an egg wash.I accidentally burned my pastry brush on the sandwich maker *LOL*...........
