Vibrant warm tortellini salad with a selection of herbs in cream
Hey ya
Today I had the urge to eat something healthy yet tasty.That was actually an experiment,but the result was so nice and tasty that I thought I would share them.
For those people who don't like greens and herbs,this won't be your favorite meal.
And this warm salad cannot be done with dried herbs.They have to be fresh.
You need:
2 portions tortellini of your choice. (I used whole grain filled with walnuts and goat cheese)
1/4 onion (finely chopped)
a few fresh or canned mushrooms (I used 5 champion mushrooms)(sliced)
a hand full of spinach (finely chopped)
5 tablespoons dill (finely chopped)
1/2 teaspoon oregano (finely chopped)
1 carrot (grated)
2 tablespoons celery leaves (chop chopped :D
70 ml milk (probably more :D)
3 tablespoons grated Parmesan
nutmeg,salt,pepper,olive oil.
Boil your tortellini according to the instructions.Strain them and let them cool a bit.
Chop all your stuff you have to chop or let the food processor do it.
In a saucepan let a few teaspoons of oil get hot and slightly fry the onions.
Now add all the herbs,mushrooms and season with pepper salt and nutmeg.
Don't add the grated carrot yet.
Let the mix cook for 3-4 min and add the milk (you can add more,if you like the sauce with a thinner texture.).
Let it boil for 3 min and add some more milk,if the mixture is too thick.At the end you add the Parmesan.
Now mix the tortellini with the sauce and add the grated carrot at the end.
Enjoy!
This is a real fast recipe,because the sauce doesn't take a lot time to cook.
