Apple-caramel pancake
Hello
Let's face it.....Breakfast pancakes with syrup are boring.Yaaaawn.Time for something a little bit more haute cuisine! I did spend some time combining the best features of pancakes,German Apfelpfannekuchen and crepes.
This recipe is actually very easy and fun to make with kids.
My apple caramel pancakes on the picture are actually flambe-d,but that is way to dangerous if you don't know what you are doing.
Even unflambe-d (lol what a word :D) the pancakes kick ass.
You need:
for the dough
250 gr Flour
500 ml milk
3 eggs
1 tablespoon cognac
30 gr melted butter
1 tablespoon sugar
a pinch of salt
1 teaspoon vanilla syrup
for the apples
1 green apple ( finely chopped)
3 tablespoons caster sugar
a pinch of cinnamon
Oil
Mix the ingredients for the dough in a bowl and beat the mixture with a mixer or a balloon whisk.Let the dough rest for 15 min.
Meanwhile put your finely chopped apple in a bowl and sprinkle it with cinnamon and caster sugar.
You need a microwave to caramelize the apples.
Just put the apples/castersugar in the microwave for 3 min on high,so the sugar melts ad caramelizes.
Add the apples in the dough.
Brush a non stick pan with a bit of oil and let it get hot.
Pour some dough into the pan and wait for 10-30 seconds.Now move the pan a bit,so the dough spreads nicely.
The pancake should not be too thick.
Bake the pancake from both sides.
When the pancakes are done,you can use chocolate spread,or raspberry jam to decorate.
