Easy,light tomato basil sauce
Hi dolls
With this heat,it is a torture to be in a tiny kitchen with no aircondition.So I try to cook quick and easy stuff that doesn't need constant supervision.This tomato basil sauce for pasta and meatballs is great,because you don't have to do a lot.
You need:
2 large,ripe,aromatic tomatoes (cut into chunky dice)
1 shallot (sliced)
1 large carrot (sliced or diced)
1 tablespoon concentrated tomato puree
1 clove of garlic
a hand full of fresh basil leafs (coarsely chopped)
200 ml of water
2 tablespoons olive oil
pepper salt
1 teaspoon sugar
In a saucepan quickly saute the shallot,garlic an carrot for 3 minutes in olive oil.Add water,pepper salt and the tomatoes.Boil for 12 minutes on medium heat.Add the tomato puree and the sugar.
Simmer until the sauce thickens slightly (3-5 min) and add the basil last minute.
Serve on your favorite pasta or meatballs.
