Vegetarian Ramen with Brussels Sprouts
Hi Dolls,
You must think I am crazy.Putting Brussels Sprouts into a Japanese soup??Well,throwing away perfect sprouts is not good.So before they go bad,I wanted to use them.
Ramen is a really nice soup for cold days.And because there are noodles and vegetables inside it is healthy.The best part is,that it is a quick soup.
You need:
2 portions of Ramen noodles
1 carrot (thinly sliced)
1/2 red or green bell pepper (thinly sliced)
1 spring onion (sliced)
1 small can of bean/bamboo sprouts
1 liter vegetable stock
10 brussles sprouts cut in 4
2 sachets white miso
300 ml water
1 tablespoon soy sauce
1 tofu omelette (optional)
pepper salt olive oil
Bring the water and the vegetable stock to a boil and add the vegetables.Boil for 4 min.Remember slicing thinly is the key to a quick soup.And a short boiling time won't kill the vitamins.
Now add the miso paste,soy sauce and the noodles.Boil the noodles (Asian Noodles usually cook within 2-4 min).Taste and season.Drizzle about a tablespoon of olive oil on top and serve with a tofu omelette.
Btw: The tofu omelette was from a store in a package of 4.They are not that bad,but the texture reminds me of a wet sponge.
