Vegetarian loaded mashed potatoes mexican style


This dish is easy and superhealthy.

You need
500 gr potatoes (peeled and diced)
1 cup green beans (chopped  in half)
1 small can kidney beans
1/2 cup corn
1 red bell pepper (chopped)
1 carrot (diced)
1/2 cup pico de gallo
3 tablespoons chopped cilantro
1 teaspoon lime juice
4 tablespoons olive oil
2-4 tablespoons tofutti vegan cream cheese
1/2 red chili pepper (remove seeds and chop finely)
1 teaspoon chopped pickled jalapenos

salt pepper paprika

Boil potatoes,carrots,green beans and bell pepper for 15-20 min.Drain the veg and mash with vegan cream cheese,olive oil and seasoningAdd the rest of the ingredients and season again if needed.

There you go!
Yummy and healthy loaded mash.
