Yummy dumplings ( they go great with gravy)

Growing up in Germany I was introduced to all sorts of dumplings,but my Granny's dumplings still remain the best.
You need:
3 medium sized potatoes
30 gr butter
70 gr semolina
1 egg
2-3 slices of old toast
2 tablespoons chopped parsley
3 tablespoons chopped dill
3 tablespoons chopped spinach
2 pinches of nutmeg
1/2 teaspoon salt
1/2 teaspoon pepper
flour
Boil the potatoes with the peel for 25 min.Peel them and puree them with a food processor.
Turn the old toast to breadcrumbs in a blender.
Mix all the ingredients well until a smooth,not runny dough forms.
Chill the dough for 30 min.
If the dough is still too runny,add some flour.If it is too thick,add milk.
Bring a lot of water to a boil and add 2 tablespoons of salt.
With wet hands,shape little balls out of the dough and drop them in the boiling water.
Let them boil for 13-20 min.
Serve with gravy or a pasta sauce.
