Stuffed mushrooms


Yesterday we learned how to clean mushrooms properly without any effort.
Today we will learn how to prepare them.
It is fun and easy.
It is not the lightest recipe in terms of calories.
But hey it is holiday season ;)

You need
40 medium sized button mushrooms
140 gr white American cheese (laughing cow ftw)
5 tablespoons olive oil
2 teaspoons lemon juice
50 gr mozzarella cheese
+20 gr mozzarella cheese
20 gr Parmesan cheese
3 tablespoons finely diced red bell pepper
2 tablespoons finely chopped dill
2-3 slices leeks
4 tablespoons milk
1/4 garlic clove finely chopped
lemon garlic salt,black pepper,sweet paprika

First you have to prepare the marinade:
Mix the olive oil with the lemon juice and season it with lemon garlic salt,black pepper and sweet paprika.
Now clean the mushrooms,dry them and remove the stipe in a circular motion.
Put the mushrooms in a mixing bowl and add the marinade.Mix the mushrooms well.
Now put them on an oven tray,so you can fill them.

For the filling you need a food processor.
Put the leeks,the garlic and the bell pepper in a small bowl and cook them in the microwave for 40 seconds on medium.

Put all the remaining ingredients (except from the 20 gr mozzarella) in a food processor and season well.
Mix it well for 1 min.
Now add the cooked veggies from the microwave and mix again for 5 seconds.

Now take a pastry bag or simply take a suitable for food plastic bag and cut a small hole in it.
Fill the pastry bag with the filling and fill your mushrooms.

At the end sprinkle some mozzarella cheese over the stuffed mushrooms.
Bake the mushrooms at 200 degree celsius until the filling has risen and the cheese is golden brown.
