Maultaschen (German Ravioli from Swabia)

This recipe is not the quickest,but it's worth the work.It was actually the first time I made Maultaschen by my own.My mistake was,I made them too big.But even though they are a bit bigger than the normal,they are so tasty.

You need
For the noodle dough:
300 gr all purpose flour
two eggs
3 tablespoons water
1 tablespoon Oil
1/2 tablespoon salt
1/2 tablespoon dried thyme


For the filling
100 gr ground pork
100 gr boiled spinach
1/2 spring onion
1/2 onion
1 slice old toast
1 egg
1 tablespoon chopped parsley
1 1/2 tablespoon chopped dill
1/4 tablespoon dried majoram
salt pepper nutmeg

First prepare the dough.Mix all ingredients together and knead for 5-10 min until silky.Chill for an hour

For the filling you need a food processor,that is able to grind meat.
Put all the ingredients in the food processor and grind until the filling becomes a thick paste.

Brink some broth to a boil (1,5 liters).
Roll out the dough very thin.With a dough knife cut out small rectangles.
Place 1/2 teaspoon of filling on top of each rectangle and fold over the rectangle and pinch the edges with a fork.

Boil the Maultaschen for 20 min in the broth.

The little dumplings in my soup are made from the filling and some semolina.
