Vegan fan potato with dip

Long time no see.
Well this vegan journey was really fun!
It was tasty,healthy and not boring at all.This recipe is wonderful.A flavor infused potato with a nice salad and a vegan dip.

You need for the dip :
70 gr tofutti vegan cream cheese
1 spring onion (chopped)
some drops lime juice
1 tablespoon olive oil
salt and pepper

Soften the vegan cream cheese with olive oil and lime juice,add the spring onion,mix and season.

For the fan potatoes :
3 medium sized potatoes
2 cloves garlic
1 lime
olive oil
a rosemary twig

Cut thin slices into your potato,but don't cut all the way down,so the bottom is attached.
Put them in a pot and cover with water.Bring to a boil and add the rosemary twig,the lime cut in half ,one garlic glove and salt.
Let your potatoes boil for 15 min and drain the water.
Chop the other clove of garlic.In a small saucepan,heat 5 tablespoons olive oil and add the garlic.Once the garlic gets some color,remove the pan from the heat.
Place your potatoes on a baking tray with nonstick paper.
Brush the garlic olive oil on and in the potatoes.Season well.

Bake on high temperature until the potatoes get some color.

The salad is a mixed salad with olive oil and some lemon juice.


Spa Water


Green Tea is something wonderful.It is not only tasty,but it is very healthy.
This Spa Water is made with decaf green Tea,so it is really a spa water that hydrates your body.
The limes and the mint give it a very refreshing taste

You need
1 liter of your favorite water
200 ml of decaf green tea steeped for 3 min cooled
 mint leaves
2 limes (cut in wedges)
1/2 lemon (cut in wedges)

big pitcher
Mix everything in your pitcher and serve on ice.


Vegan Veggie Rigatoni

Servus (That is Bavarian and means hi)

Why do a lot of people think,that vegan food is bland and boring?
Vegetables can never be boring,because they are full of flavor (well except canned veggies,they are bland and boring).
'This dish is full of flavor and full of vitamins and no,it is not boring at all.

You need
700 gr Rigatoni w/o egg
1 red bell pepper
1 orange bell pepper
1 zucchini
1 carrot
some broccoli
1 spring onion
mushrooms (canned or fresh)
some cherry tomatoes
etc.....add more veggies if you want :D
150 ml soy heavy cream
olive oil
lemon garlic salt
1 teaspoon freshly chopped dill
1 teaspoon freshly chopped parsley

The sauce is actually pretty easy to make,it just requires some chopping skills.Chop all the veggies (the smaller,the faster they cook) and put them in a medium saucepan.Cover them with water and bring them to a boil.Let them boil for 7-12 min.
Drain the water and set the veggies aside.
Put the cream,the parsley,the dill and a teaspoon of olive oil in a saucepan.Bring to a boil and add nutmeg.
Mix in the veggies and boil for 2 min.
Season-done! Keep warm on very low heat,so the flavors can develop and you can boil your pasta!
Boil your pasta,drain water,serve with sauce!



Strawberry pineapple smoothie infused with green tea


Smoothies are a very great invention....But sometimes I wonder,why people prefer to buy smoothies that are full of sugar and fat,instead of making their own ones at home.
It is so quick and easy and I promise you,you'll always infuse your smoothie with green tea.

You need:
150 ml cooled green tea of your choice.I used Ginseng Green Tea
10 strawberries (remove the green)
1 slice of fresh pineapple
1/2 banana
optional : sugar/sweetener

Just put everything in your blender and hit the button.
Add some crushed ice if needed.




Nutty Twisters


I know you have been through this kind of situation.You are sitting at home,the phone rings and some family members or mothers in law invite themselves to your house.
Dang! Panic!.........
You have no cake,nothing you could offer to your guest.......
And you gotta impress your mother in law....
Omg.....what to do????
No panic....Nutty Twisters is your life saver.
Quick and easy.All you need is a blender

You need:
2 sheets of puff pastry
250 gr hazelnuts
100 gr sliced almonds
180 gr sugar
1/2 teaspoon ground cinnamon
50 gr butter
100-150 ml heavy cream
a pinch of salt
some flour
optional : raisins

Mix half of the almonds with the 2/3 of the hazelnuts and put them into your blender.Turn them into ground almonds and hazelnuts.Add the sugar ,the salt and the cinnamon to the nuts in the blender and blend again.
Now add the butter and half of the cream.You want to achieve a quite thick paste.If the mix is too runny,add more hazelnuts,if it is too stiff,add some cream.
On a floured surface,roll out the puff pastry a bit and spread half of the mixture on one sheet puff pastry.Make sure the mixture is not spread too thick,otherwise your Nutty Twisters will look disgusting after baking.Sprinkle with some almond slices.(and if you like raisins in your twisters,sprinkle them all over)
Now tightly roll the puff pastry and cut it into 1 inch thick slices.
Place the slice on a grease proof non stick baking paper.
Repeat the process for the second sheet of puff pastry.

Bake for 15-25 min /200 degree Celsius/medium high temp.

The nut mix will caramelize and you will love it.
It can also be eaten for breakfast.



Asian style pork and veggies


I think I have said that before: I don't dare to say that my recipes are authentic Asian/Indian food.
Asian food is great and even the Chinese Take away can be very inspiring for me.

I was given a real wok some days ago and I tested it already.So today I wanted to try to fry and then later boil in it.It worked like a charm and it was difficult not to steal from the plate while I was taking the pics for you guys.
You can be very creative in your choice of vegetables.You can even do it without meat.And a wok is not needed.

You need
2 pork neck steak (cut in stripes)
2 spring onions (sliced)
1 eggplant (diced)
2 carrots (julienne)
2 bell peppers (orange or red,cut in stripes)
beans (green beans or kidney beans)
-any veg of your choice,I had those in my fridge
1/2 mango (small diced)
2 slices of fresh pineapple (diced)
1 teaspoon freshly chopped cilantro
1 tablespoon apple cider vinegar
1 teaspoon honey
1 tablespoon soy sauce
1 sachet miso soup

peanut oil,water

In your pan/wok let 2 tablespoons of peanut oil get very hot and fry the meat while stirring for 3 min.
Now add all the fruit and veg and add 1-2 cups of water.Add honey,vinegar,soy sauce and let the mix boil for 10 min.Add the miso soup and season.Let the mix boil until the veggies are cooked to your taste.
At the end add the cilantro and season if needed.

This goes great with rice and noodles.


Easy Salad with yummy dressing

Now the weather is getting warmer here ,so we gotta adjust our diet to lighter things.
This salad is easy and the dressing is just the best in the world.

For the dressing:
1 tablespoon cream cheese (low fat) or yogurt
1 tablespoon mayonnaise or Remoulade
the juice of 1/2 lemon
1/2 teaspoon lime juice
3 tablespoons olive oil
1/2 teaspoon sugar (you can use more if you like)
garlic salt,black pepper
1/2 teaspoon fresh chopped dill

In  a bowl mix the cream cheese with the olive oil and soften the cream cheese.Give it a good whisk.
Now stir in the mayonnaise and the dill.
In a small cup mix the sugar and the lemon/lime juice and slowly add it to the other mix,while constantly stirring.
Season,whisk,set aside.

For the salad:
1 small bag mixed salad of your choice
2 carrots (carrot shavings)
1 red or orange bell pepper
10 cherry tomatoes cut in half
1 spring onion finely chopped
1 slice fresh pineapple (diced)
1/4 mango (diced)

Just mix the salad and dress it.
How to dress a salad?Well people tend to drown their salads with dressings (especially the awful dressings that just taste of vinegar).
For dressing a salad properly you need a big mixing bowl.Put in your salad and add a little dressing.Then you mix up the salad with your hands or by tossing and shaking the bowl.
If more dressing is needed,add it the same way.
Please people,don't drown your salads with dressing.
The point of eating a salad is tasting the veg and all its goodness!

Easy Nail Art Deco


I love nail art!
But I dislike the fact that my right hand nail art turns out looking like the paintings of a 2 year old...
A lot of people told me that it only takes practice,but to tell you the truth I think my left hand is just shaky and it didn't become less shaky in a year of practice.
The alternative is to buy those little nail art thingies from the drugstore or from nail art supply,which is kind of expensive.
The drugstore doesn't have anything that a Goth girl would wear.
So I came up with this funny idea,which turned out to be quite a solution to my problem.

Here we go !
You need :
Any color of nail polishes you like.
a clear nail polish
a sharpened pencil
a glass/bowl
plastic wrap/cling film/cling wrap
rubber band
patience =))

Step one.take your bowl  and cover the opening of the bowl with plastic wrap.Slightly pull it,so the surface is bump free.
Now tighten it with a rubber band or an elastic.
Apply a very thin coat of clear nail polish all over the surface and let it dry for 1 hour.
The plastic wrap will wrinkle as soon as the nail polish touches it,but don't worry as soon as it dries the surface will be smooth again.

Let's proceed to the artistic part of this tutorial.
Take your pencil and get all the nail polish colors ready.
I recommend to cover your working space with a newspaper,so it won't get messy.
Pick up some color with the pencil and without applying any pressure you start painting whatever you like.
The photos are actually taken on my first try *lol*
I am sure your designs will be more inspiring than mine *lol*

Let your design dry for 2 hours.
Now you can cut out your little designs roughly.Once you get them separated cut them out more precisely.

To put those little things on your nail,simply pick up a small drop of clear polish and place it on your nail.
It should be in the desired location for your nail art deco.Now pick up the deco with your finger (the nailpolish side upwards) and place it on your nail.With a q-tip smooth out the wrinkles and apply two coats of clear nail polish or your favorite top coat.

 Be creative!Create glitter stripes that you can use to spice up you french manicure,ornaments,flowers,words,symbols.....


Greek Souvlaki

If you have been to Greece you probably have seen Souvlaki.(Su-wla-kee).It is something like our national (fast) food.The Souvlaki can come in different sizes,different ways of preparing and different tastes.
Today I will show you how you can make your own Souvlaki-Kalamaki (Ka-la-ma-kee) from a cheaper cut of meat.Only the Souvlaki and the Pita bread are actually Greek.The salad has Greek herbs with a tropical twist.
Usually the Souvlaki is eaten with Tzatziki,tomato,onion,Pita bread and fries......but in my kitchen the word usually is banned.

Today I will be using a cheaper cut of meat.Cheap doesn't have to mean that it tastes cheap.

For the meat
2 cloves garlic
the juice of one lemon
1 tablespoon freshly chopped oregano
2 pork neck steaks
olive oil,pepper,salt,
bamboo skewers

For the potatoes
2 medium sized potatoes boiled with the peel
2 tablespoons butter or margarine
1 tablespoon freshly chopped parsley
sweet paprika,pepper salt,garlic powder

For the salad
2 large carrots
1/4 mango
1/2 teaspoon chopped parsley

Okay lets start with the marinade for the meat.
In a blender add the lemon juice,1 teaspoon olive oil,garlic,oregano pepper and salt.Blend it well.
Cut your pork neck steaks into evenly sized dice.Make sure you remove the little bone.
Now let your pork rest in the marinade for at least one hour.The best thing you can do is to marinade the meat overnight so it can really suck up all that flavor of the marinade.
Grab your bamboo skewers and start putting the meat on the skewer.
You can either bbq the meat or simply fry it in a pan.
For preparing your meat in the pan,use some olive oil to fry the meat until it gets some color.
Add the salt at the end,because cheaper meat tends to release a lot of it's juices when it is salted before cooking.

The preparation of the potatoes is easy.
You can even use leftover potatoes from the day before.
Simply cut the boiled potatoes in thick slices and fry them in paprika and garlic powder flavored butter or margarine and add the parsley at the very end.
Don't forget to season!

The salad is even easier:
Grind your carrots on a cheese grinder,dice your mango,add the parsley,toss the salad-done!
Of course you can add a dressing or some olive oil,but I prefer the pure taste of carrot and mango.
If you don't have mango at home,use an apple or a pear.

Maybe you have some Tzatziki or sour cream in your fridge.......It goes great with the meat.
I used cream cheese Haha ,cuz I didn't have either of the above things to accompany my meat.
