I mean hello!

Tzatziki is wonderful.
It can be used in so many different ways:
-Dip: For chopped veggies,meat,crackers and potato chips
-Spread: On bread with fresh tomato slices or in a Greek Pita bread.
-Sauce : In a salad sauce,on a sandwich or burger on steaks.

It is pretty easy too!
You need:
400 g  Yogurt (Greek Yogurt is the best in Tzatziki )
1 small cucumber
1 or 2 cloves garlic (ground garlic)
1 teaspoon olive oil
a few drops lemon juice

Wash the cucumber well and remove the seeds.
Grind the cucumber finely into a sieve and push/press out all the excess water.
In a mixing bowl,mix the yogurt and the olive oil with a balloon whisk and add a few drops of lemon juice.
Add the garlic and the cucumber and mix well.
Season with salt and pepper.


Tzatziki tastes so great with hash browns or with any kind of potato dishes.
I had some weird soy-celery-zucchini hash browns :D



Crispy potato skins


I love potato skins,but I hate when they are not crispy.
So here is how you get supercrispy potato skins.

You need:
10 small potatoes suitable for baking
50 gr butter
1/2 teaspoon minced garlic (I used 1/4 teaspoon)
bacon bits (I didn't use any)
200 gr cheddar/mozzarella/Parmesan  cheese

Wash your potatoes well and boil them until they are done (10-25 min) and drain the water.
Let the potatoes cool for 1 hour.
Now cut them in half and scoop out the inside of the potato.
In a saucepan melt the butter and add the minced garlic.Season very well with the spices (be generous).
Now with a pastry brush cover your potatoes with the butter mixture.Inside and outside.
Place your potatoes on a baking tray that is covered with wax paper.
Bake them at a high temperature (200 Celsius no air) for 15 min and then turn them around and bake them for another 5-10 min.
Now you can add cheese,bacon,sour cream,green get the idea and bake for another 5 min.

I am on a diet so I used low fat cheese.That's why my potato skin filling/stuffing looks so white and pale.*lol*


Chocolate covered Strawberries

Yes,I know Valentines day is over.Maybe that is the reason why I am posting the recipe now.
I am not a big fan of Valentines day anyway.But I have to confess that I do love the chocolate covered strawberries.
So while buying potatoes in a veggie market,I saw Strawberries.Yes Strawberries in winter/early spring!
Maybe that is nothing special in the USA,but here in Greece it is.
I thought that the strawberries would taste like nothing,but I was wrong.
They are as delicious as in April/May.

You need
500 gr Strawberries (washed and dried)
200 gr semi-sweet chocolate
100 gr dark chocolate
optional: white chocolate or coconut shavings for the decoration.

Your strawberries should be 100% dry,otherwise the chocolate will go clumpy.
Break your chocolate into pieces and melt it either in a bain-Marie or in the microwave.
Melting the chocolate in a bain marie allows the choco to stay shiny.
As you can see my chocolate is melted in the microwave and has lost it's shine.
Once your chocolate is melted,dip in strawberries and place them on wax paper to harden.
Sprinkle with coconut shavings or white chocolate.



Spaghetti with Meatball sauce


Spaghetti with meatballs is something very simple,easy to make for a crowd of hungry meatball lovers.
These meatballs are juicy,eggless,breadless and yet super moist and yummy.

You need:
4 portions of spaghetti
500 gr ground beef
1 tomato (peeled and chopped)
1 onion (diced)
1 shallot (mini diced)
1 carrot (sliced)
1 bell pepper (red or yellow,diced)
1-2 slices of chili pepper
2 tablespoons chopped parsley
1/2 teaspoon dried oregano
1 glass of red whine
1 teaspoon sugar
1 pinch of cinnamon
salt pepper,sweet paprika,olive oil
chicken stock.
concentrated tomato juice/puree

Okay,here we go.
Mix the ground beef with the shallot dices and season well with paprika,pepper and salt.
Make your meatballs (the smaller the quicker they cook)
In a saucepan let some olive oil get hot and quickly fry your meatballs until the outside is cooked.
Deglaze with the whine.
Now add the rest of the veggies and spices and cover them with chicken stock.
Let it boil for 10 min and season.
Now add 200 ml tomato juice (or 2 tablespoons concentrated tomato puree) and let it reduce for another 10 min.

Cook your pasta according to the instructions on the package or according to your taste.
I like my pasta overcooked (Shame on me!)


Bought the wrong shade of concealer/foundation?

Every Girl has been through this.We went off the make up store or drugstore and bought the wrong shade of concealer or foundation.
No need to be angry for the money you wasted.
You can simply make a tinted moisturizer in less than 5 min.

You need
Your favorite moisturizer with at least 15 SPF
foundation/concealer in a darker shade
a container (I used an old foundation bottle)
tooth picks

Put some moisturizer in your container and simply add a few drops of concealer/foundation and mix well with a tooth pick.
Test the mixture on the back of your hand to see if you have reached the desired shade yet.
I used 3 parts moisturizer,1 part concealer and 1 part foundation.
You can also add loose mineral powder or some shimmer.

I am sooo happy with the result.The tinted moisturizer is perfect for evening out your skin tone and it is a great base for make up.
Mine has a quite strong coverage,because of the concealer.
But I am super happy,that the money I spend for the concealer didn't get wasted.



A vibrant mixed salad with fried cod


Sorry I didn't upload any new recipes this week,but the stuff I ate/cooked was not worth photographing.I was too lazy to cook something pretty. :D
This Salad is inspired by a dish I saw on Gordon Ramsey's show.His version had a more expensive fish,which was grilled.

You need:

For the sauce
2 tablespoons extra virgin olive oil
the juice of a half lemon
1 tablespoon yogurt (I chose Greek low fat)
1 teaspoon honey
1/2 garlic clove (I took 1/3)crushed
1/2 teaspoon chopped dill
1 teaspoon mayonnaise

Mix all the ingredients and stir well,until the honey has dissolved.

For the cod:
2-3 fillets of cod
1 cup all purpose flour
1/2 teaspoon curry powder
1/2 teaspoon thyme
1/2 teaspoon tumeric
salt pepper
1/2 cup olive oil

Cut your cod into stripes and season it with pepper and salt.
Now mix flour,curry,thyme,tumeric,salt and pepper in a freezer bag and add the cod stripes.
Close the bag well and shake so the cod gets evenly coated.
In a frying pan let 1/2 cup of olive oil get hot and fry your cod for 5-8 min until it has a light golden color.
Make sure you don't fry your fish too long,because cod tends to get dry very quickly.
(You don't wanna make Gordon Ramsay yell at you cuz your fish is too dry :D :D)

For the Salad
1 bag (2 portions) of mixed salad
1/2 yellow bell pepper
1 diced carrot
You can also add corn,cheese,ham,bacon,grilled creative)
Add half of the sauce to the salad and mix it well,so the sauce spreads evenly.
Place your warm cod fillets on the salad and drizzle them with the sauce.



Mini donuts


I have a sweet tooth and I turn into a chocolate craving zombie every once in a while.
Last night I wanted something rich and full of chocolate.

You need:
400 gr soft/pastry flour
100 gr whole grain flour (so we can pretend we are eating healthy XD)
active dry yeast suitable for 500 gr flour
50 gr melted butter
lukewarm water
2 tablespoons sugar
1 tablespoon honey
1 teaspoon salt
1 teaspoon vanilla extract
200 gr dark chocolate

Mix the flour with the yeast and add the sugar,salt,honey,vanilla and the butter.
Now slowly add water and keep on kneading until a smooth dough forms,that does not stick to the fingers.If it is too sticky,add extra flour.If it is too dry/hard,add water or butter.

Let the dough rise at a warm place for 30 min.
Roll out the dough on a floured surface and cut out little donuts with a small glass.
Pierce them with a wooden cooking spoon or with your fingers.
Place them on a floured tray and cover them with a clean towel.
Let the donuts rise for 30 min.

Now get your fryer ready on a medium high temperature.
When the oil is hot enough,fry your donuts until they are brown.
To drain access oil,place the donuts on paper towels to cool.

Now melt your chocolate either in a bain marie or in the microwave.You can also use other chocolate.
Dip in the donuts and let the chocolate cool for 2-3 hours.

If you don't want to mess around with doughs,you can use pizza dough from the supermarket and add icing/powder sugar to sweeten it.

Get creative with the frosting.Mine is simple and boring.


Exotic freestyle chicken.


Today was a bad day in terms of cooking.I almost finished cooking my Indian Style chicken,when I cut myself on a coconut milk can.
There was enough blood to make a splatter horror movie.
So some of the dish slightly burned,but I could save it.
You don't have to stick to my choice of veggies.I just used what I had at home.All the veggies/fruit I used are chopped in cubes/dice.

You need:
4 pretty chicken breasts (sliced thickly)
1/2 mango
1/2 baby pineapple
1 onion
1 spring onion
1/2 teaspoon ground ginger
1 crushed clove garlic
2 teaspoons green curry paste
1 teaspoon curry powder (not the hot one)
1/2 teaspoon tumeric
4-5 tablespoons chopped coriander
1-2 tablespoons honey
200 ml coconut milk
1 tablespoon soy sauce
Olive oil,pepper salt
1/2 red hot chilly (if you dislike hot food,use 1/4)
squash (3-4 thick slices banana squash)
red/yellow bell pepper (1 red/2 yellow)
broccoli (leftovers approx 2 cups)
green beans (1 cup)
fennel root (1)

Rub your chicken with a pinch of salt,pepper and curry powder.Sear it in a hot pan with olive oil until it has a light golden brown color.
Set aside.
In the same pan,add all the veggies and cover them with water.
Bring to a boil and add the rest ingredients except of the coconut milk.
Let the veggies boil for 15-20 min and add the chicken.
At the end add the coconut milk and season if needed.

Serve with rice.

I don't think that this dish has anything to do with Indian cuisine.It has just a little hint of the flavorful Indian cuisine.


Squash soup


This is the perfect match for the squash bread.
Its fun and very easy.

You need:
750 gr diced squash
200 gr diced potatoes
2 sliced carrots
150 ml heavy cream (I chose vegetable based cream with low fat/calories)
2 tablespoons olive oil
1 tablespoon chopped parsley
1 tablespoon chopped coriander
1/2 teaspoon curry powder (not the hot/spicy one)
a pinch of tumeric

Put your diced/sliced veg in a pot and cover with water.Add the olive oil and bring to a boil.Let the veg boil for 15 min.
Drain the veg,but keep the water.It is full of flavor and vitamins.
Puree the veg with the water and the cream.Season with the listed spiced.
Add the chopped parsley and keep the chopped coriander for the decoration.



Squash Bread

Hello ^^

I made the mistake to buy a huge banana squash,because it was so cheap.
So after buying it I was imagining myself eating squash soup for one week.
I was thinking about what I could do with that much squash.While watching a Tv show the saving idea finally hit my head.
In the Tv show a lady from the south talked about pumpkin bread.
So I thought that pumpkin and squash both go in the same direction taste wise.

You need :
250 gr soft/pastry flour
250 gr all purpose flour
400 gr whole grain flour
100 gr rolled/old fashioned oats
500 gr Banana squash dices
1 grated carrot
dry active yeast suitable for 1000 gr Flour
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 cup olive oil (you probably gonna need less)
1 teaspoon sugar
1 1/2 teaspoons salt
1 tablespoon honey
lukewarm water

For the yummiest crust ever:
1 tablespoon soy sauce
1 1/2 tablespoon honey
100 ml water
1 teaspoon corn starch

Ok first we prepare the squash: Put the dices in a pot and cover them with water.Bring to a boil and boil on high temperature for 12 min.Drain the squash dices and puree in the blender.
Let the squash puree cool (open window) for 10-15 min.
For the dough mix the dry active yeast with the flour(keep some extra flour).Add the squash puree,oats,soy sauce,vinegar and the honey.Mix the dough with your hands.Now gradually add water and some olive oil until a smooth dough forms.Knead the dough and add the carrot shavings/grated carrot.Let the dough rise in a warm place for an hour.
After the dough has risen you can shape it into two big breads or many small.
Now you gotta prepare the glaze.
Bring 100 ml water to a boil and add honey and soy sauce.
Mix in the cornstarch while stirring with a whisk.
The glaze should thicken a bit,but it should not be to gooey.
With a pastry brush,brush the hot glaze on the breads.

Bake at 180 degree celsius for 20-35 min (according to the size).To see if the bread is ready,stick a toothpick into the middle of the bread.When you pull it out and the toothpick is clean,the bread is ready.If it still has dough or crumbs on it,add some baking time.

You can also add sunflower seeds to the bread.Be creative ;)
